This Savory Pumpkin Galette with Goat Cheese is a delicious fall-inspired rustic tart featuring a flaky homemade crust, a creamy pumpkin and browned butter filling, caramelized onions, tangy goat cheese, and fresh sage. Perfect as a seasonal appetizer or light main dish, it balances sweet and savory flavors and requires no special equipment beyond a baking sheet and skillet.

  • Total Time: 1 hour 5 minutes
  • Yield: 8 servings

Ingredients

For the Crust

  • ¾ cup all purpose flour
  • ¾ cup white whole wheat flour (or regular whole wheat flour)
  • 4½ ounces unsalted butter (cold, cut into cubes)
  • ½ teaspoon salt
  • 1 large egg
  • 2-3 tablespoons cold water

For the Filling

  • 6 tablespoons unsalted butter
  • 1 tablespoon fresh sage (finely chopped, plus 6-8 whole leaves for topping)
  • 2 cups pumpkin puree (canned or fresh)
  • 1 large egg (plus another large egg beaten for egg wash)
  • 1 teaspoon kosher salt
  • 1 cup caramelized onions (from about 2-3 onions)
  • 4 ounces goat cheese
  • 2 tablespoons honey
  • Flaky sea salt (such as Maldon for sprinkling, optional)

Instructions

  1. Make the Crust: In a medium bowl, combine the all purpose flour, whole wheat flour, and salt. Add the cold butter cubes and use a pastry cutter or fork to cut the butter into the flour until pea-sized pieces remain.
  2. Bring Dough Together: Whisk 1 egg with 2 tablespoons cold water in a small bowl. Pour this into the flour mixture and stir gently with a fork until the dough begins to come together. Add 1 to 2 more tablespoons of cold water if needed to form a ball. Avoid kneading or overmixing.
  3. Chill the Dough: Shape the dough into a ball, wrap tightly with plastic wrap, and refrigerate for at least 30 minutes to firm up before rolling.
  4. Prepare the Filling: Melt the 6 tablespoons of butter in a sauté pan over medium heat until it foams, sizzles, then turns golden brown with a nutty aroma. Immediately stir in the finely chopped sage, then remove from heat.
  5. Mix Pumpkin Filling: In a medium bowl, combine the pumpkin puree, browned butter and sage mixture, 1 egg, and kosher salt. Stir thoroughly until smooth.
  6. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 425°F. Line a baking sheet with parchment paper.
  7. Roll Out Dough: On a lightly floured surface, roll the chilled dough into a 12-inch circle. Transfer carefully to the parchment-lined baking sheet.
  8. Assemble Galette: Spread the pumpkin mixture evenly in the center of the dough, leaving a 2-inch border around the edges.
  9. Add Toppings: Scatter the caramelized onions over the pumpkin filling, then crumble the goat cheese evenly on top. Drizzle with honey and distribute the whole sage leaves across the surface.
  10. Fold the Edges: Fold the edges of the dough up over the filling, pleating as needed to create a rustic crust.
  11. Apply Egg Wash and Season: Brush the exposed crust with the beaten egg and optionally sprinkle with flaky sea salt for added texture and flavor.
  12. Bake: Place the galette in the preheated oven and bake for 25 to 30 minutes or until the crust turns a golden brown.
  13. Cool and Serve: Remove from oven and allow to cool for at least 20 minutes before slicing and serving to let the filling set.

Notes

  • For best results, use cold butter for the crust to ensure a flaky texture.
  • You can substitute white whole wheat flour with regular whole wheat flour if preferred.
  • If you don’t have caramelized onions prepared, slowly cook sliced onions in a bit of butter or oil over low heat until deeply browned and sweet.
  • The galette can be served warm or at room temperature.
  • For a vegan version, substitute the butter with a plant-based alternative and replace eggs with flaxseed or other egg replacers.
  • Store leftovers covered in the refrigerator for up to 3 days and reheat gently before serving.
