Ingredients
Fish and Marinade
- 4 portions sea bass
- 2 tablespoons butter (melted)
- 1 tablespoon olive oil
- 2 teaspoons soy sauce
- 1/2 teaspoon ground ginger
Avocado Salsa
- 2 large avocados (diced small)
- 1 teaspoon minced jalapeno
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons lime juice
- 1 pinch salt (or to taste)
For Garnish (Optional)
- 1/2 teaspoon crushed red pepper flakes
Instructions
- Prepare the Sea Bass: Place 4 portions of sea bass into a shallow dish and set aside.
- Make the Marinade: In a small bowl, whisk together 2 tablespoons melted butter, 1 tablespoon olive oil, 2 teaspoons soy sauce, and 1/2 teaspoon ground ginger until fully combined.
- Marinate the Fish: Pour the marinade over the sea bass, turning the fillets gently to coat all sides evenly. Cover the dish and refrigerate for 15 to 20 minutes, but do not exceed this time to maintain fish texture.
- Prepare Avocado Salsa: While the fish marinates, combine 2 diced large avocados, 1 teaspoon minced jalapeno, 2 tablespoons chopped fresh cilantro, and 2 tablespoons lime juice in a small bowl. Season with a pinch of salt and stir gently to combine. Set aside.
- Heat the Skillet: Place a large heavy skillet over medium-high heat and allow it to preheat thoroughly to ensure a good sear on the fish.
- Sear the Sea Bass: Remove sea bass from marinade allowing excess to drip off, then place fillets skin-side down (if applicable) in the hot skillet. Sear for approximately 4 minutes per side, adjusting for the thickness of the fillets. The fish is done when it flakes easily with a fork and is opaque throughout.
- Serve: Remove the cooked sea bass from the skillet and serve immediately topped with the avocado salsa. Optionally, garnish with crushed red pepper flakes and season with additional salt to taste.
Notes
- Do not over-marinate the fish to preserve its delicate texture.
- If your sea bass fillets have skin, sear skin-side down first to crisp it up.
- Adjust the level of jalapeno in the salsa to control the heat intensity.
- Serve immediately after cooking for optimal flavor and texture.
- You can substitute fresh lime juice with lemon juice if preferred.
