Ingredients
Noodles & Vegetables
- 9.5 oz soba noodles
- 1 red pepper, thinly sliced
- 2 large carrots, shredded (approx 2 cups)
- 2 cups red cabbage, shredded
- 1 cup cooked edamame (8-10 oz in the pod)
- 1/2 tablespoon sesame seeds (optional)
Dressing
- 1/4 cup sesame oil
- 2-3 cloves fresh garlic, minced
- 1 tablespoon fresh ginger, minced
- 2 tablespoons hoisin sauce
- 1 tablespoon soy sauce
- 2 tablespoons seasoned rice vinegar
- 1/4 teaspoon salt
Instructions
- Boil Noodles: Start by bringing a pot of water to boil. While waiting, prepare all vegetables by slicing and shredding as needed and place them in a large mixing bowl.
- Make Dressing: In a small bowl or measuring cup with a spout, combine sesame oil, minced garlic, minced ginger, hoisin sauce, soy sauce, seasoned rice vinegar, and salt. Whisk thoroughly until well incorporated.
- Cook Noodles: Once the water is boiling, add soba noodles and cook for about 4 minutes or according to package instructions until tender.
- Drain and Rinse: Drain the cooked noodles into a colander and immediately rinse with cold water to stop the cooking process and remove excess starch.
- Combine Noodles with Vegetables: Shake off excess water from the noodles, then using tongs or hands, add small portions of noodles to the bowl with vegetables, mixing as you go to evenly distribute.
- Add Dressing: Pour the prepared dressing over the noodle and vegetable mixture and toss well to coat all ingredients evenly with the dressing.
- Serve or Chill: Sprinkle with optional sesame seeds for garnish. Serve immediately or cover and refrigerate until ready to serve.
Notes
- If desired, add protein such as grilled chicken or tofu to make this a more substantial meal.
- Feel free to substitute soba noodles with whole wheat spaghetti if soba is unavailable.
- Adjust the amount of garlic and ginger in the dressing to taste for a milder or stronger flavor.
- The salad can be stored covered in the refrigerator for up to 2 days for meal prepping.
- For a spicier kick, consider adding a teaspoon of chili paste or sriracha to the dressing.
