Ingredients
Gnocchi and Sausage
- 1 (16-oz.) package uncooked potato gnocchi
- 3 links cooked Italian chicken sausage, sliced into 1/2-inch rounds (substitute vegan sausage such as Field Roast brand if desired)
Vegetables
- 1 pint cherry tomatoes
- 1 small red onion (or 1/2 large), sliced into wedges
Seasoning and Sauce
- 3 tablespoons extra-virgin olive oil
- 3/4 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 cup prepared pesto (e.g., DeLallo brand)
Optional
- 8 oz. burrata cheese, halved for serving
Instructions
- Preheat and Prepare Pan: Preheat your oven to 425ºF (220ºC). Line a large rimmed baking sheet with foil to ensure easy cleanup after roasting.
- Arrange Ingredients: On one half of the baking sheet, evenly spread the uncooked potato gnocchi and sliced Italian chicken sausage. On the other half, spread out the cherry tomatoes and red onion wedges. This separation helps with even roasting of the different components.
- Season and Toss: Drizzle the olive oil over all the ingredients on the sheet. Sprinkle kosher salt and black pepper evenly, then gently toss everything together on the pan so the gnocchi, sausage, tomatoes, and onions are well coated but still separated into their halves.
- Bake: Place the baking sheet in the preheated oven and roast for 30 minutes, tossing everything once halfway through the cooking time—around 15 minutes—to ensure even browning and roasting.
- Add Pesto and Serve: Remove the baking sheet from the oven and immediately add the prepared pesto over the roasted ingredients. Toss gently on the pan to coat everything in the pesto. Divide the mixture into bowls and serve each with half a ball of burrata cheese if using, adding a luscious creamy finish to the dish.
Notes
- If using vegan sausage, ensure it’s pre-cooked before roasting with the gnocchi.
- For an extra crisp texture, spread the ingredients in a single layer without overcrowding the pan.
- Leftovers can be reheated in a skillet over medium heat or in the oven to maintain crispness.
- Use fresh pesto or store-bought depending on time availability; fresh pesto will enhance the herb flavor.
- Substitute burrata with fresh mozzarella for a less rich, but still creamy alternative.
