Ingredients
Protein
- 2 1/2 cups cooked chicken, shredded (300 grams) (Rotisserie chicken recommended)
Vegetables and Herbs
- 1 large shallot, finely sliced or chopped (about 1/3 cup or 40 grams)
- 1/3 cup packed chopped fresh cilantro or parsley leaves (about 20 grams)
- 5 - 7 fresh basil leaves, chopped or torn into small pieces
- 1 - 2 teaspoons chopped fresh rosemary
- 1 avocado, peeled and cubed
Dressing and Seasoning
- 1/4 cup extra virgin olive oil (or more as desired)
- 1 teaspoon lime or lemon juice
- Salt and black pepper to taste
Other
- 1/2 cup cubed hard cheese of your choice (68 grams)
- 1/2 lime or lemon, cut into wedges (to garnish)
Instructions
- Shred the chicken. Place the cooked chicken in a large mixing bowl. Use your fingers to pull apart the chicken meat into fine, shredded pieces to ensure even texture in the salad.
- Add shallots and herbs. Add the finely sliced or chopped shallots and chopped fresh cilantro or parsley to the bowl. If you are using any optional add-ins such as fresh basil, rosemary, or cheese, add them at this stage as well.
- Toss ingredients gently. Carefully toss all the ingredients together in the bowl until they are well combined, ensuring even distribution of herbs and shallots.
- Season the salad. Drizzle the extra virgin olive oil and lime or lemon juice over the mixture. Add salt and black pepper according to your taste preferences.
- Mix thoroughly. Toss gently again to incorporate the olive oil and seasonings evenly throughout the salad.
- Adjust seasoning. Taste the salad and adjust salt, pepper, or olive oil as needed. Toss once more and continue tasting until the seasoning is balanced and to your liking.
- Garnish and serve. Serve the salad with lime or lemon wedges on the side for extra zest if desired.
- Optional serving ideas. Make this salad a full meal by pairing it with a large green salad or serve it on low-carb bread or lettuce wraps for delicious chicken sandwiches.
