Ingredients
Ladolemono Sauce
- 1 batch Ladolemono Sauce (prepared separately)
Main Ingredients
- 5 tablespoons extra virgin olive oil, divided
- 1 medium shallot, finely chopped
- 3 garlic cloves, finely chopped
- Sea salt, to taste (approximately 1/2 teaspoon plus more for seasoning)
- Freshly ground black pepper, to taste (approximately 1/4 teaspoon plus more for seasoning)
- 1/4 teaspoon Aleppo pepper or crushed red pepper flakes (optional)
- 1 1/4 pounds extra-large shrimp (21 to 25 per pound), peeled and deveined, thawed, rinsed, and patted dry
- 3 packed cups broccoli florets
- 1/4 cup water
Instructions
- Make the Ladolemono Sauce: Prepare the Ladolemono Sauce according to the recipe or use a pre-made batch to add a vibrant lemony olive oil dressing for this dish.
- Marinate the Shrimp: In a medium bowl, whisk together 3 tablespoons olive oil, finely chopped shallot, chopped garlic, 1/2 teaspoon sea salt, 1/4 teaspoon black pepper, and optionally Aleppo pepper or crushed red pepper flakes. Add the shrimp and toss to coat thoroughly. Cover and let it marinate at room temperature for 20 to 30 minutes, allowing the flavors to meld.
- Cook the Broccoli: While the shrimp marinate, heat a large skillet over medium-high heat. Add the broccoli florets and pour in 1/4 cup water. Cook for about 5 minutes, frequently turning the broccoli, until it is fork-tender yet still crisp and brightly colored. Remove the broccoli and set it aside, emptying the skillet in preparation for shrimp cooking.
- Cook the Shrimp: Return the skillet to the stove over medium-high heat. Add the remaining 2 tablespoons of olive oil. Once the oil shimmers, add the marinated shrimp and all the marinade to the pan. Cook the shrimp for approximately 2 minutes on each side, turning them halfway through. Shake the pan occasionally to prevent the shallots and garlic from burning and ensure even cooking. The shrimp are done when they turn pink and curl slightly.
- Combine Broccoli and Shrimp: Return the cooked broccoli to the skillet. Season with additional sea salt and black pepper to taste. Gently toss everything together and cook for another minute to warm the broccoli through and meld the flavors.
- Add Sauce and Serve: Whisk the Ladolemono Sauce to recombine and pour some over the shrimp and broccoli mixture. Toss gently to coat. Taste and adjust seasoning if necessary. Serve immediately with remaining Ladolemono Sauce on the side for extra flavor.
Notes
- Use fresh shrimp for best taste, but frozen shrimp thawed properly also work well.
- Adjust Aleppo pepper or red pepper flakes to your spice preference or omit for a milder dish.
- To make Ladolemono Sauce, whisk together good quality extra virgin olive oil, fresh lemon juice, garlic, oregano, and salt – typical Greek salad dressing flavors.
- Broccoli should be cooked until just tender to keep its vibrant color and crunch.
- Serve over rice, quinoa, or with crusty bread to complete the meal.
