Ingredients
Shrimp Marinade
- 1 lb 26-30 count uncooked shrimp (peeled and deveined)
- 1 tsp corn starch
- 1/4 tsp sea salt
- 1/4 tsp freshly ground black pepper
Cooking
- 3 Tbsp LIGHT olive oil or canola oil (divided)
- 4 large eggs (beaten)
- 1/4 cup green onion (finely chopped)
- 5 cups leftover chilled white rice (rinse rice before cooking)
- 12 oz frozen carrots and peas (thawed)
- 2 Tbsp soy sauce or coconut aminos (or added to taste)
- 1 1/2 tsp sesame oil
Instructions
- Marinate shrimp: In a medium bowl, mix the shrimp with cornstarch, salt, and pepper. Let the shrimp marinate at room temperature for 10 minutes to absorb the flavors and improve texture.
- Cook the shrimp: Heat a large non-stick skillet over medium-high heat. When a bead of water sizzles and evaporates, swirl in 2 Tbsp of cooking oil. Add the shrimp in a single layer and cook for 1 minute per side until the shrimp are cooked through and opaque. Remove cooked shrimp to a bowl.
- Cook the eggs: Reduce heat to medium. Using the same skillet, add beaten eggs and break them up with a spatula. Cook until eggs are fully set and no longer runny. Remove eggs to a separate bowl.
- Cook green onions: Wipe down the skillet with a paper towel to remove residue. Return to medium-high heat, add 1 Tbsp oil and chopped green onions. Cook for about 30 seconds until fragrant.
- Cook the rice: Stir in the chilled rice, spreading it evenly over the skillet. Allow it to cook undisturbed for 1 to 2 minutes for slight crisping, then stir and sauté for another 1 to 2 minutes until sizzling.
- Add sauces and vegetables: Drizzle soy sauce evenly over the rice and stir well. Add sesame oil along with thawed carrots and peas, mixing thoroughly to combine all ingredients.
- Combine all and finish: Return cooked shrimp and eggs to the skillet. Mix everything together and continue cooking until the rice is hot and sizzling, stirring frequently. Adjust soy sauce to taste if desired, then serve warm.
Notes
- Use leftover chilled rice for best texture, as fresh rice may become mushy when fried.
- Make sure shrimp are peeled and deveined for easy eating and better flavor absorption.
- You can substitute soy sauce with coconut aminos for a soy-free option.
- Feel free to customize the vegetables by adding bell peppers, corn, or bean sprouts.
- If you prefer more heat, add a dash of chili flakes or sriracha sauce.
- Clean the skillet between cooking shrimp and eggs to avoid burnt bits which can affect flavor.
- Adjust seasoning according to your taste preference, especially the amount of soy sauce and salt.
