Ingredients
Filling
- 1 cup feta cheese, crumbled
- 1 cup mozzarella, grated
- ¼ cup parsley, chopped
Pastry and Cooking
- 8 pieces phyllo sheets (filo pastry)
- 1 tbsp water (for brushing)
- ½ cup oil (for frying)
Instructions
- Prepare the filling: In a bowl, combine the crumbled feta cheese, grated mozzarella, and chopped parsley thoroughly to create a flavorful mixture. Set this aside for assembling the rolls.
- Cut the phyllo sheets: Take each phyllo sheet and cut it lengthwise into four equal strips. To prevent the strips from drying out, cover the remaining pieces with a tea towel while working.
- Assemble the rolls: Place one strip of phyllo pastry in front of you. Add about one tablespoon of the cheese and parsley filling to one end of the strip.
- Fold and roll the pastry: Fold the two long edges slightly inward to cover the filling partially, then roll the strip tightly toward the other end. Brush a small amount of water on the tip of the strip to seal the roll and prevent it from unrolling during frying.
- Repeat for all strips: Place each sealed roll on a plate and cover with a towel to keep them from drying out. Continue the process until all the strips are filled and rolled.
- Heat oil for frying: Pour ½ cup of oil into a frying pan and heat it over medium-high heat until hot enough for frying, but not smoking.
- Fry the rolls: Fry the Sigara Boregi rolls in batches, turning them occasionally to achieve a golden brown and crispy exterior on all sides. This should take a few minutes per batch.
- Drain and serve: Remove the fried rolls and place them on a plate lined with paper towels to absorb excess oil. Serve the Sigara Boregi warm or at room temperature as a delightful snack or appetizer.
Notes
- Make sure to keep the phyllo pastry covered to prevent it from drying out as you work.
- Frying in batches helps maintain the oil temperature for even cooking and crispiness.
- You can substitute mozzarella with another mild melting cheese if desired.
- Serve with a side of yogurt or a fresh salad for a complete appetizer experience.
- Leftover rolls can be reheated in the oven to retain crispiness instead of microwaving.
