Ingredients
Seafood
- 1 pound crawfish meat
- 1 ½ pounds raw shrimp, peeled and deveined, roughly chopped
- ½ pound crab meat
Soup Base
- 2 cups (4 sticks) salted butter
- 6 green onions, white and green parts, finely chopped
- ½ cup all-purpose flour
- 4 cups heavy cream
- 4 cups half and half
- 1 (14.75-ounce) can creamed corn
Seasonings
- 1 ½ teaspoons Tony Chachere's Original Creole Seasoning
- 1 teaspoon Old Bay Seasoning
- 1 teaspoon kosher salt, plus more to taste
- 2 teaspoons freshly cracked black pepper
- 1 teaspoon cayenne pepper
Garnish and Serving
- ¼ cup minced fresh chives (optional)
- Crusty bread, for serving (optional)
Instructions
- Prepare the Base: Melt the butter in a large pot over medium heat. Once melted, add the chopped green onions and cook, stirring frequently, until they become tender, about 3 minutes. Stir in the flour to form a roux, mixing until fully incorporated and smooth.
- Add Seafood and Liquids: Incorporate the crawfish, chopped shrimp, crab meat, heavy cream, half and half, and creamed corn into the pot. Stir in the Tony Chachere's Creole Seasoning, Old Bay Seasoning, kosher salt, cracked black pepper, and cayenne pepper to build layers of flavor.
- Simmer and Thicken: Bring the mixture to a gentle simmer over medium-high heat while stirring continuously. Then reduce the heat to medium-low and cook, stirring frequently, for about 40 minutes. This slow simmer allows the bisque to thicken and the flavors to meld beautifully.
- Serve: Ladle the finished bisque into bowls. Garnish with minced fresh chives if desired, and serve alongside crusty bread for a complete meal experience.
Notes
- If crawfish meat is unavailable, substitute with an equal amount of crab meat for a similar flavor and texture.
- Stir frequently during simmering to prevent the bisque from sticking to the bottom of the pot or forming lumps.
- Adjust cayenne pepper according to desired spice level.
- Use fresh seafood for best flavor, or thaw frozen seafood completely before cooking.
