Ingredients
Protein and Vegetables
- 3 lbs boneless skinless chicken breasts
- 4 cups fresh broccoli florets
Slow Cooker Sauce
- 2 cups chicken broth
- ⅓ cup soy sauce
- 1 Tablespoon pure maple syrup
- 1 teaspoon sesame oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 Tablespoon minced garlic
- 1 teaspoon ground ginger
- 1 Tablespoon dried onion flakes
Thickener
- 2 Tablespoons corn starch
- 3 Tablespoons water
To Serve
- White rice, cooked as desired
- Sesame seeds, for garnish
Instructions
- Prepare the slow cooker: Spray your slow cooker with a nonstick cooking spray to prevent sticking and make cleanup easier.
- Arrange chicken and broccoli: Place the boneless skinless chicken breasts at the bottom of the slow cooker. Layer the fresh broccoli florets on top of the chicken.
- Make the sauce: In a medium bowl, whisk together the chicken broth, soy sauce, pure maple syrup, sesame oil, salt, pepper, minced garlic, ground ginger, and dried onion flakes until well combined.
- Add sauce to slow cooker: Pour the prepared sauce evenly over the chicken and broccoli in the slow cooker, ensuring everything is well coated.
- Cook slowly: Cover the slow cooker and cook on high for 3 hours or on low for 5 to 6 hours. To keep broccoli crisper, wait and add it during the last 30 minutes of cooking instead of at the beginning.
- Prepare thickening slurry: In a small bowl, whisk together the cornstarch and water until smooth to create a slurry for thickening the sauce.
- Thicken the sauce: Stir the cornstarch slurry into the slow cooker contents. Cover and cook for an additional 5 to 10 minutes until the sauce has thickened nicely.
- Serve: Spoon the chicken and broccoli mixture over cooked white rice. Garnish with a sprinkle of sesame seeds for added flavor and texture. Enjoy your slow cooker meal!
Notes
- For crisper broccoli, add it during the last 30 minutes of slow cooking rather than at the beginning.
- You can substitute chicken thighs for chicken breasts if preferred, but cooking times may vary.
- Adjust the amount of soy sauce if you desire a saltier or milder flavor.
- If you want a gluten-free version, use gluten-free soy sauce or tamari.
- Serve with steamed white rice or substitute with brown rice or cauliflower rice for a healthier alternative.
- Make sure to whisk the cornstarch slurry well to avoid lumps when thickening the sauce.
