Instructions
- Gather Ingredients: Collect all the ingredients listed to have them ready for easy preparation.
- Combine Ingredients in Slow Cooker: Place the shredded chicken, mashed whole peeled tomatoes, enchilada sauce, chopped green chiles, chopped onion, and minced garlic into your slow cooker.
- Add Liquids and Seasonings: Pour in the water and chicken broth. Season with cumin, chili powder, salt, black pepper, and add the bay leaf. Stir in the frozen corn and chopped cilantro. Cover the slow cooker.
- Cook the Soup: Cook on Low for 6 to 8 hours or on High for 3 to 4 hours until the flavors are well combined and the soup is thoroughly heated.
- Prepare Tortilla Strips: Toward the end of the cooking time, preheat the oven to 400°F (200°C). Lightly brush both sides of the corn tortillas with vegetable oil.
- Cut and Bake Tortilla Strips: Cut the oiled tortillas into strips and spread them evenly on a baking sheet. Bake in the preheated oven for 10 to 15 minutes or until they are crisp and golden brown.
- Serve the Soup: Remove the bay leaf from the soup. Ladle the soup into bowls and sprinkle the crispy tortilla strips on top. Optionally garnish with grated Cheddar cheese, avocado slices, and a splash of fresh lime juice to brighten the flavors.
