This Slow-Cooker Thai Beef Noodle Soup is a deeply flavorful and comforting dish featuring fork-tender beef simmered in a fragrant broth with star anise, cinnamon, and soy. Finished with fresh greens, noodles, and crunchy toppings, it’s a satisfying, set-it-and-forget-it meal.

  • Total Time: 8 hours 20 minutes
  • Yield: 4 servings

Ingredients

  • 6 garlic cloves, peeled and roughly chopped
  • 6 coriander (cilantro) roots, cleaned and coarsely chopped
  • 1 teaspoon whole black peppercorns
  • 1 tablespoon vegetable oil
  • 500g (1 lb) beef chuck steak (or stewing beef), cut into bite-size pieces
  • 3 whole star anise
  • 1 cinnamon stick
  • ¼ cup soy sauce
  • 1 tablespoon dark soy sauce
  • 1.5 litres (1.6 qt) beef stock
  • 300g (10.5 oz) Asian beef balls (optional)
  • 2 cups sliced Asian greens (e.g. bok choy, pak choy, Chinese kale)
  • Cooked noodles (rice noodles or egg noodles), to serve
  • Fish sauce, to season
  • 1 cup bean sprouts, to serve
  • Thai basil leaves, to serve

Instructions

  1. Use a mortar and pestle to pound the garlic, coriander roots, and peppercorns into a rough paste.
  2. Heat vegetable oil in a large pan over high heat. Add the garlic mixture and cook for 30 seconds until fragrant.
  3. Add beef and sear on all sides for 2–3 minutes until browned. Stir in star anise, cinnamon stick, soy sauces, and beef stock. Transfer mixture to a slow cooker.
  4. Cook on medium-low for 8 hours, until the beef is tender and flavorful.
  5. Remove and discard the star anise and cinnamon stick. Use a slotted spoon to transfer beef to a board and set aside.
  6. Add beef balls (if using) and Asian greens to the slow cooker. Increase heat to medium-high and simmer for 2–3 minutes until warmed through and tender. Season with fish sauce to taste.
  7. Divide cooked noodles between bowls. Top with braised beef, beef balls, and greens. Ladle broth over the top.
  8. Serve with bean sprouts and Thai basil leaves.

Notes

  • Optional beef balls add a traditional touch, but the soup is delicious without them.
  • Use any variety of Asian greens available to you.
  • Taste and season with fish sauce just before serving for balance.
  • Prepare noodles just before serving to prevent them from becoming soggy.
