  • Total Time: 40 minutes
  • Yield: 8 servings

Ingredients

    • For the Chili:
    • 6 cups chicken broth
    • 4 cups rotisserie chicken, shredded
    • 2 (15 oz) cans cannellini beans, drained
    • 2 tsp ground cumin
    • 2 tsp chipotle chili peppers in adobo sauce, seeds removed
    • 2 cups prepared salsa verde
    • 8 oz cream cheese, cut into cubes

  • For the Avocado Tomatillo Crema:
  • 1 large California avocado, peeled and pitted
  • 1/2 cup Mexican crema (or table cream or half & half)
  • 3/4 cup tomatillos, diced
  • Juice of 1 lime
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 1/2 jalapeño, seeds removed
  • 4 tbsp chopped cilantro

Instructions

  1. Make the Chili: In a large pot, bring the chicken broth and shredded rotisserie chicken to a boil. Add 1 full can and half of the second can of drained cannellini beans.
  2. In a blender or food processor, combine 1/2 cup of the hot broth from the pot with the remaining 1/2 can of beans, cumin, and chipotle chili peppers. Blend until smooth.
  3. Stir the blended mixture back into the pot along with the salsa verde and cream cheese cubes. Simmer, stirring occasionally, until the cream cheese is fully melted and the chili is creamy. Season with salt and pepper to taste.
  4. Make the Avocado Tomatillo Crema: In a blender or food processor, combine avocado, crema, diced tomatillos, lime juice, garlic powder, salt, jalapeño, and chopped cilantro. Blend until smooth. Transfer to a dressing bottle for easy drizzling.
  5. Serve: Ladle chili into bowls and drizzle with avocado crema. Optional toppings include crushed tortilla chips, diced avocado, chopped cilantro, sour cream, shredded cheese, and diced green onions.

Notes

  • Adjust the chipotle peppers for more or less heat as desired.
  • Chili can be made ahead and reheats well. Crema should be used within 2–3 days.
  • For a thicker chili, mash some of the beans before adding them to the pot.
