Sour Cream Potato Bake is a comforting and creamy side dish made with tender boiled russet potatoes combined with tangy sour cream, sharp cheddar cheese, and fresh green onions, then baked until just golden. This easy-to-make casserole is perfect for family dinners and gatherings.

  • Total Time: 1 hour 30 minutes
  • Yield: 6 servings

Ingredients

Potatoes

  • 3 lbs russet potatoes, scrubbed with skins on (about 9 regular or 6 large)

Mixture

  • 16 ounces sour cream
  • 1 bunch green onions, thinly sliced (divided)
  • 1½ cups sharp cheddar cheese, shredded (about 4 ounces)
  • ½ tsp salt
  • ¼ tsp pepper
  • Dash paprika

Instructions

  1. Preheat oven: Preheat your oven to 350℉ (175℃) and spray a 9 x 13-inch baking dish with cooking spray to prevent sticking.
  2. Boil potatoes: While the oven is heating, place the whole russet potatoes with skins on in a large pot. Cover with water by about 1 inch and bring to a boil. Cook the potatoes until they are very tender and a sharp knife easily pierces through the thickest part, approximately 45-60 minutes depending on size.
  3. Cool and peel: Remove the potatoes from the boiling water and let them cool until they can be handled safely. Then peel off the skins and cut the potatoes into ¾ to 1 inch pieces.
  4. Mix ingredients: In a large bowl, combine the cut potatoes with sour cream, shredded sharp cheddar cheese, ¾ of the sliced green onions, salt, and pepper. Mix everything thoroughly to evenly coat the potatoes with the creamy mixture.
  5. Prepare for baking: Spread the potato mixture evenly in the prepared baking dish. Sprinkle a dash of paprika on top for color and flavor, then scatter the reserved green onions over the top.
  6. Bake: Bake the potato casserole in the preheated oven for 30-40 minutes until it is heated through and just beginning to turn golden on top. Note that the casserole will not be bubbly when done.

Notes

  • Make sure potatoes are fully cooked and tender before mixing to ensure a creamy texture.
  • You can substitute sharp cheddar cheese with your preferred cheese, such as Monterey Jack or Colby.
  • For extra flavor, add a pinch of garlic powder or smoked paprika into the mixture.
  • If you prefer a crustier top, you can broil for 2-3 minutes at the end, watching carefully to avoid burning.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
