This spicy Korean beef noodles recipe features tender flank steak marinated in a flavorful Korean gochujang sauce, stir-fried with onions, mushrooms, and ramen noodles. Ready in just 30 minutes, it combines savory, spicy, and slightly sweet flavors for a quick, satisfying dinner that's easy to prepare in one pan.

  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

For the Marinade and Sauce

  • 4 tablespoons gochujang (Korean chili paste)
  • 2 tablespoons thinly sliced green onions
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 4 teaspoons minced garlic
  • 1 teaspoon ground ginger
  • 1 tablespoon sesame oil
  • 4 teaspoons sugar

For the Beef and Noodles

  • about 1 pound flank steak
  • 2 tablespoons oil
  • 2 packages beef ramen noodles including seasoning
  • 1 ½ cups water
  • ½ white onion, thinly sliced
  • ½ cup sliced mushrooms

Instructions

  1. Prepare the Marinade: In a small bowl, whisk together gochujang, green onions, soy sauce, rice vinegar, minced garlic, ground ginger, sesame oil, and sugar until well combined.
  2. Marinate the Beef: Pour half of the marinade into a large ziplock bag. Add the flank steak to the bag, seal it tightly, and refrigerate for at least 30 minutes or up to overnight for maximum flavor. Cover and refrigerate the remaining sauce for later use.
  3. Cook the Steak: Heat 2 tablespoons of oil in a large pan or skillet over medium-high heat. Using tongs, transfer the steak from the marinade bag to the pan (discard the marinade inside the bag). Cook the steak for 5-8 minutes on each side, until nicely browned on the outside and cooked to your preferred doneness. Remove the steak and place it on a cutting board to rest.
  4. Cook the Vegetables and Noodles: To the same pan, add the thinly sliced onion, mushrooms, ramen noodles, seasoning packets from the ramen, and the marinade that was left in the bag. Pour 1 ½ cups of water over everything and bring to a simmer. Let it cook for 5-7 minutes, stirring occasionally, until the noodles are tender and cooked through.
  5. Combine and Serve: Thinly slice the rested steak across the grain into strips. Add the steak strips and reserved sauce to the pan with noodles and vegetables. Stir well to combine and heat through for a couple of minutes. Garnish with additional green onions if desired and serve immediately.

Notes

  • Gochujang can be found in the Asian section of most grocery stores or Asian markets; it adds a distinctive spicy and savory flavor.
  • Flank steak is ideal for this recipe due to its tenderness and flavor, but you can substitute with skirt or sirloin steak if preferred.
  • For less heat, reduce the amount of gochujang or add a bit of honey to balance the spice.
  • Marinating the steak overnight enhances the flavor and tenderness but is optional if you're short on time.
  • The recipe uses the seasoning packets from the ramen noodles for extra beef flavor, but you can replace with low-sodium beef broth powder if preferred for less salt.
