Ingredients
Rice Base
- 2 cups cooked sushi rice
- 2 tbsp rice vinegar
- 1 tbsp sugar
- ½ tsp salt
- Oil (enough for frying)
Salmon Topping
- 8 oz sushi-grade salmon, finely chopped
- 2 tbsp mayonnaise
- 1 tbsp sriracha sauce
- 1 tsp soy sauce
Additional Toppings
- 1 medium avocado, mashed
- 1 sliced jalapeno (for garnish)
- 1 tsp black sesame seeds (for garnish)
- 1 tsp white sesame seeds (for garnish)
Instructions
- Prepare sushi rice mixture: In a medium bowl, combine cooked sushi rice, rice vinegar, sugar, and salt. Mix well to ensure even seasoning throughout the rice.
- Set and shape the rice: Line a rectangular dish with plastic wrap. Transfer the rice mixture into the dish and firmly press it into a uniform layer. Refrigerate for at least 1 to 2 hours to allow the rice to set and become easier to cut.
- Cut the rice into squares: After chilling, remove the rice from the dish and cut it into 12 equal squares to create the base for frying.
- Fry the rice squares: Heat oil in a skillet over medium heat. Fry the rice squares on both sides until they turn crispy and golden brown. Remove and drain excess oil.
- Prepare the salmon mixture: In a separate bowl, mix finely chopped sushi-grade salmon with mayonnaise, sriracha sauce, and soy sauce. Stir until well combined and set aside.
- Mash the avocado: In another bowl, mash the avocado until smooth and creamy. Set aside for topping.
- Assemble the crispy rice bites: Place a dollop of mashed avocado on each crispy rice square, then top with a tablespoon of the spicy salmon mixture. Garnish with sliced jalapenos, sprinkle black and white sesame seeds, and drizzle additional sriracha sauce if desired.
- Serve: Transfer the assembled spicy salmon crispy rice to a serving plate and enjoy immediately for the best texture and flavor.
Notes

- Make sure to chill the rice thoroughly to help it hold its shape while frying.
