Ingredients
Bread
- 1 (14 ounce) loaf Italian bread
Spinach and Artichoke Mixture
- 3 ounces fresh spinach (3-4 cups)
- 8 ounces full-fat sour cream, room temperature
- 8 ounces full-fat cream cheese, room temperature
- 12 ounce jar artichoke hearts, drained and roughly chopped
- 3 cloves garlic, minced
- 4 ounces shredded mozzarella (one-third of 12 ounces)
- 5 ounces shredded Parmesan
- Kosher salt, to taste
- Fresh cracked pepper, to taste
Topping
- 8 ounces shredded mozzarella (remaining two-thirds)
Garnish
- Fresh chopped parsley
Instructions
- Preheat the oven: Heat your oven to 350°F (175°C) to prepare for baking the bread.
- Prepare the bread: Slice the loaf of Italian bread in half lengthwise and place both halves cut side up on a large baking sheet.
- Make the spinach mixture: In a large bowl, combine fresh spinach with sour cream, cream cheese, chopped artichoke hearts, minced garlic, one-third of the shredded mozzarella, all the Parmesan cheese, and season generously with kosher salt and fresh cracked pepper. Mix thoroughly until all ingredients are well incorporated into a creamy dip.
- Assemble the bread: Evenly spread the spinach and artichoke dip mixture over the cut side of each bread half. Then sprinkle the remaining mozzarella cheese evenly on top.
- Bake the bread: Bake the prepared bread in the preheated oven for 25 to 30 minutes, or until the cheese is melted and the edges of the bread are turning a golden brown color.
- Broil for a golden finish: For a perfectly browned and bubbly cheese topping, switch your oven to broil and broil the bread for 1 to 2 minutes. Watch carefully until the cheese turns dark golden brown.
- Cool and serve: Remove the bread from the oven and let it sit for about 5 minutes to cool slightly. Slice the bread into servings, garnish with freshly chopped parsley, and enjoy your delicious appetizer!
Notes
- Ensure cream cheese and sour cream are at room temperature for smooth mixing.
- Use fresh spinach for best flavor but frozen can be substituted if thoroughly drained and chopped.
- Adjust salt and pepper according to taste preferences.
- Broil time may vary depending on oven; watch closely to prevent burning.
- Great served warm alongside marinara or ranch for dipping.
- Leftover bread can be refrigerated and gently reheated in the oven for best texture.
