Ingredients
Dressing
- ¼ cup plain Greek yogurt
- 3 tablespoons mayonnaise, or extra Greek yogurt
- 1 tablespoon lemon juice, or 1½ teaspoons apple cider vinegar
- 1 tablespoon extra virgin olive oil
- ¼ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- ½ teaspoon garlic powder
Salad
- 3 cups cooked and shredded chicken breast (rotisserie chicken works great)
- 14 ounce can artichoke hearts, drained and chopped small
- 2 cups baby spinach, finely chopped after measuring
- 3 green onions, trimmed and thinly sliced
- ½ cup shredded Parmesan cheese
Instructions
- Prepare the dressing: In a large mixing bowl, combine the Greek yogurt, mayonnaise, lemon juice, extra virgin olive oil, kosher salt, ground black pepper, and garlic powder. Whisk thoroughly until all ingredients are smoothly blended.
- Add the main ingredients: To the bowl with the dressing, add the cooked shredded chicken, chopped artichoke hearts, finely chopped baby spinach, sliced green onions, and shredded Parmesan cheese.
- Mix and season: Toss all the ingredients together until everything is evenly coated with the dressing. Taste the mixture and adjust seasoning with additional salt and pepper if needed.
- Serve or store: Enjoy the salad immediately or store it in an airtight container in the refrigerator for up to 4 days.
- Serving suggestions: This salad is delicious on its own, or served atop mixed greens, inside pita pockets, wraps, sandwiches, or scoop it up with your favorite chips for a flavorful snack.
Notes
- Rotisserie chicken is a convenient shortcut to save time but cooking and shredding your own chicken breast is equally great.
- The salad can be made a few hours in advance to allow flavors to meld.
- You can substitute mayonnaise with more Greek yogurt for a lighter, tangier dressing.
- Adjust the lemon juice or vinegar according to your preferred acidity level.
- Store leftovers in an airtight container and keep refrigerated; consume within 4 days for best quality.
