Ingredients
Puff Pastry
- 2 puff pastry sheets (thawed)
Filling
- 3 Tablespoons unsalted butter
- 1 onion (sliced)
- 2 cloves garlic (chopped)
- 1 pound fresh spinach (stems removed)
- Black pepper (to taste)
- 8 ounces cream cheese (softened)
- ½ teaspoon dried thyme
- ½ teaspoon dried tarragon
- ½ teaspoon dried dill
- ½ teaspoon salt
Instructions
- Sauté Onions: Melt the unsalted butter in a large frying pan over medium heat. Add the sliced onions and stir frequently, cooking them until they become soft and golden brown.
- Prepare Spinach: While the onions cook, wash the fresh spinach thoroughly, dry it completely, and roughly chop it.
- Add Garlic: Once the onions are done, add the chopped garlic to the pan and cook for about 30 seconds until fragrant.
- Cook Spinach: Add the chopped spinach to the pan, season with black pepper, and cook by continuously turning it with tongs until the spinach wilts.
- Mix Filling: Transfer the cooked spinach and onion mixture to a large bowl. Add the softened cream cheese, dried thyme, dried tarragon, dried dill, and salt. Mix well using a fork until fully combined.
- Prepare Puff Pastry: When the puff pastry sheets are soft and pliable, unfold them onto a lightly floured surface.
- Spread Filling: Divide the cream cheese and spinach mixture evenly between the two puff pastry sheets, spreading it lightly and evenly across each one.
- Roll Pastry: Starting from one edge, carefully roll each pastry sheet into a log shape. Place these rolls onto a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
- Preheat Oven: Heat the oven to 400ºF (205ºC) in preparation for baking.
- Slice and Bake: Remove the chilled rolls from the refrigerator and slice them into ½ inch thick pinwheels. Arrange the slices on the parchment-lined baking sheet with space between each. Bake for about 25 minutes or until the pinwheels are puffed and golden brown.
- Serve: Let the pinwheels cool for a few minutes before serving warm. They can also be refrigerated for 2-3 days and served cold as a delicious snack.
Notes
- Ensure the puff pastry is thoroughly thawed for easier handling and rolling.
- You can substitute fresh herbs for the dried thyme, tarragon, and dill for a fresher flavor.
- For a vegan version, replace butter and cream cheese with plant-based alternatives.
- Store leftovers in an airtight container in the refrigerator and reheat in the oven for best texture.
- These pinwheels can be made ahead and frozen before baking; bake directly from frozen, adding a few extra minutes to the cooking time.
