A vibrant and healthy Spring Medley Frittata featuring a blend of fresh vegetables, mozzarella cheese, and a touch of Dijon mustard, finished with a crisp spring salad topping. Perfect for a nutritious breakfast or light lunch.

  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

Egg Mixture

  • 6 eggs
  • 1/2 cup SimplyNature Organic 2% Milk
  • 1 teaspoon Burman’s Dijon Mustard
  • Salt and pepper to taste
  • 1 cup Happy Farms Shredded Mozzarella Cheese

Vegetables and Salad

  • 1 tablespoon extra virgin olive oil
  • 1 small onion, chopped
  • 8 oz mushrooms, sliced
  • 5 oz SimplyNature Organic Baby Spinach
  • 5 spears asparagus, blanched and cut into 1 to 2 inch pieces
  • SimplyNature Organic Spring Mix, for topping
  • Radishes, sliced thin, for topping
  • SimplyNature Balsamic Vinaigrette or balsamic glaze, for dressing

Instructions

  1. Prepare Egg Mixture: Preheat the oven to 500°F (or set to full broil). In a large mixing bowl, whisk together eggs, milk, Dijon mustard, salt, and pepper. Stir in shredded mozzarella cheese and set the mixture aside.
  2. Sauté Vegetables: Heat olive oil in a large oven-safe skillet (preferably cast iron) over medium-high heat. Add chopped onions and sliced mushrooms and sauté for about 5 minutes until tender. Add baby spinach and blanched asparagus pieces and cook for another 4 to 5 minutes until spinach softens.
  3. Cook Frittata on Stovetop: Pour in the egg and cheese mixture over the cooked vegetables and reduce heat to medium. Cook undisturbed for 6 to 8 minutes until the eggs are mostly set.
  4. Broil Frittata: Transfer the skillet to the preheated oven and broil until the top turns golden brown—this should be just a few minutes. Keep a close eye to avoid burning.
  5. Rest and Serve: Remove the skillet from the oven and let the frittata cool for 5 to 7 minutes. Top with organic spring mix, sliced radishes, and drizzle with balsamic vinaigrette or glaze. Serve warm and enjoy!

Notes

  • Blanch asparagus beforehand by boiling briefly and then plunging into ice water to preserve color and texture.
  • If you don’t have a broiler, you can bake the frittata at 375°F for 10-12 minutes until set and golden on top.
  • Use a well-seasoned cast iron skillet for best heat distribution and ease of broiling.
  • Feel free to substitute mozzarella with other cheeses like feta or cheddar for different flavors.
  • This recipe can be customized with additional vegetables such as bell peppers or zucchini depending on preference.
