Ingredients
Cookies
- ½ Cup unsalted butter, at room temperature
- 1 Box strawberry cake mix (15¼ ounces)
- ½ Cup powdered sugar, for rolling
- 8 Ounces cream cheese, at room temperature
- 1 large egg, at room temperature
Topping
- 36 strawberry ice cream cone kisses, unwrapped
Instructions
- Beat the butter, egg, and cream cheese: In a large bowl, use a hand or stand mixer to beat the unsalted butter, egg, and cream cheese together until the mixture is creamy and smooth, ensuring an even texture without lumps.
- Mix in the cake mix: Gradually add the strawberry cake mix to the wet ingredients and continue beating until fully combined. Scrape the sides of the bowl to eliminate any dry cake mix for a uniform dough.
- Chill the dough: Cover the dough and place it in the refrigerator to chill for 30 minutes. This step helps the dough firm up, making it easier to scoop and shape.
- Preheat the oven: While the dough chills, preheat your oven to 350°F (175°C) to prepare for baking.
- Prepare baking sheets: Line two large baking sheets with parchment paper to prevent the cookies from sticking and to ensure even baking.
- Scoop and shape the dough: Using a 1-tablespoon cookie scoop, portion out the dough evenly. Roll each portion in your hands to form smooth balls.
- Roll in powdered sugar: Roll each dough ball in the powdered sugar, coating them evenly. Arrange the sugar-coated dough balls on the prepared baking sheets, spacing them about 1½ inches apart to allow for spreading.
- Bake the cookies: Place the baking sheets in the oven and bake for 8 to 10 minutes, or until the edges of the cookies have set and look firm but the centers remain soft.
- Press the kisses: Immediately after removing the cookies from the oven, gently press one strawberry ice cream cone kiss into the center of each cookie so it adheres as the cookie cools.
- Cool and serve: Allow the cookies to cool completely on the baking sheets. Once cooled, serve them fresh or store in an airtight container for later enjoyment.
Notes
- For best results, make sure the butter and cream cheese are softened to room temperature before mixing.
- Chilling the dough is essential to make shaping easier and to help the cookies maintain their shape while baking.
- If you prefer extra sweetness, dust the cooled cookies lightly with additional powdered sugar.
- Store cookies in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
- You can substitute strawberry cake mix with other flavored cake mixes for variety, though this will change the cookie flavor.
