A moist and flavorful sweet potato bread infused with chai spices, perfect for a cozy snack or breakfast treat. Made with canned sweet potatoes and a hint of warming spices, this bread offers a delicious twist on traditional quick breads.

  • Total Time: 1 hour 15 minutes to 1 hour 25 minutes
  • Yield: 10 servings

Ingredients

Main Ingredients

  • 1 can Sweet potatoes (15 oz. can, drained into a bowl)
  • 1/4 cup Sweet potato juice (reserved from canned sweet potatoes)
  • 2 Large eggs
  • 1/3 cup Oil
  • 1/3 cup Water
  • 1 1/4 cup Granulated sugar
  • 1.5 tsp Chai spice
  • 1/4 tsp Baking powder
  • 1 tsp Baking soda
  • 1 3/4 cups All-purpose flour

Instructions

  1. Prepare sweet potato mixture: In a large mixing bowl, add the drained sweet potatoes and reserved sweet potato juice. Mash with a fork or potato masher until smooth and well combined.
  2. Add wet ingredients and sugar: To the mashed sweet potatoes, add eggs, oil, water, and granulated sugar. Mix until all ingredients are combined evenly.
  3. Combine dry ingredients: Add chai spice, baking powder, baking soda, and all-purpose flour to the wet mixture. Stir gently until just combined. Optionally, add a small amount of orange food coloring for a more vibrant color.
  4. Prepare loaf pan: Grease and flour a large 9x5 inch loaf pan, or alternatively, line it with parchment paper to prevent sticking.
  5. Pour and spread batter: Pour the batter into the prepared loaf pan and spread it evenly using a spatula.
  6. Bake: Bake in a preheated oven at 350°F (175°C) for 60 to 70 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool and slice: Remove the bread from the oven and let it cool completely at room temperature. Once cooled, use a sharp knife to cut into slices and serve.

Notes

  • Be careful not to overmix the batter to keep the bread light and tender.
  • Using parchment paper can make removing the bread easier and helps prevent sticking.
  • The chai spice blend adds a warm flavor; you can adjust the amount or substitute with cinnamon and nutmeg if preferred.
  • Adding a small amount of orange food coloring is optional and only affects the bread’s appearance.
  • Make sure the loaf is completely cooled before slicing to avoid crumbling.
