Ingredients
Base
- 2 large sweet potatoes
- Spray oil or oil for drizzling/rubbing (such as avocado, coconut, or olive oil)
- ¼ tsp chili powder
- ¼ tsp garlic powder
- Cayenne pepper (spicy) or paprika (mild), to taste
- Salt and pepper, to taste
Cheese
- 1 cup freshly grated cheese (cheddar, pepper jack, or Mexican blend)
Optional Toppings
- Black beans
- Fresh or pickled jalapeno peppers
- Greek yogurt or sour cream
- Guacamole or sliced avocado
- Salsa or pico de gallo
- Tomatoes
- Black olives
- Pickled red onions or chopped green onions
- Shredded romaine lettuce
- Corn salsa or sweet corn
- Chopped bell peppers or sweet mini peppers
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the sweet potato slices evenly.
- Prepare Sweet Potatoes: Wash and scrub the sweet potatoes thoroughly. Remove the skin using a vegetable peeler and slice them into thin discs using a sharp knife or mandolin for uniform thickness.
- Season and Arrange: Drizzle, rub, or spray the sweet potato slices lightly with your preferred healthy oil (avocado, coconut, olive, etc.). Arrange the slices in a single layer on a baking sheet or pan to ensure even roasting. Season with chili powder, garlic powder, cayenne pepper or paprika as desired, and salt and pepper to taste.
- Roast Sweet Potatoes: Place the baking sheet in the oven and roast the slices for 30-40 minutes, or until the sweet potatoes become tender and slightly crisp at the edges.
- Add Cheese and Heat: Remove the baking sheet from the oven and evenly top the roasted sweet potato slices with your choice of veggies, black beans, and grated cheese. Return to the oven for a few minutes until the cheese is fully melted, hot, and bubbly.
- Finish with Cold Toppings: After removing the nachos from the oven, layer on cold toppings such as Greek yogurt or sour cream, guacamole, salsa, chopped green onions, or any other favorite toppings. Serve immediately and enjoy!

- Sweet potato slices can be roasted ahead and refrigerated; add cheese and toppings just before serving.
