A comforting and hearty Tater Tot Casserole featuring a savory blend of ground beef, mixed vegetables, creamy mushroom soup, and melted cheddar cheese topped with crispy golden tater tots. Perfect for a family dinner or potluck, this easy-to-make casserole is baked to perfection for a delicious, satisfying meal.

  • Total Time: 1 hour 10 minutes
  • Yield: 6 servings

Ingredients

Meat and Vegetables

  • 1 pound lean ground beef
  • 1 medium yellow onion, diced
  • 2 cups frozen mixed vegetables, thawed or fresh diced

Liquids and Seasonings

  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • ⅓ cup milk
  • ¼ teaspoon dried oregano
  • ¼ teaspoon dried parsley
  • Salt and black pepper to taste

Cheese and Topping

  • 2 cups shredded cheddar cheese, divided
  • 1 (28 to 30 ounce) bag frozen tater tots

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it is hot and ready to bake the casserole evenly.
  2. Cook Ground Beef and Onion: In a large skillet over medium-high heat, brown the ground beef along with the diced onion until the beef is no longer pink and the onion is softened. Drain off any excess fat to keep the casserole from being greasy.
  3. Mix Ingredients: In a medium bowl, combine the thawed mixed vegetables, condensed cream of mushroom soup, milk, dried oregano, dried parsley, salt, black pepper, and the cooked beef and onion mixture. Stir in ½ cup of shredded cheddar cheese until well incorporated.
  4. Assemble Casserole: Spread the beef and vegetable mixture evenly into a 3-quart or 9x13-inch baking dish. Sprinkle the remaining 1½ cups of shredded cheddar cheese evenly on top of the mixture.
  5. Add Tater Tots: Arrange the frozen tater tots in a single layer on top of the cheese-covered beef mixture.
  6. Bake: Place the casserole in the preheated oven and bake for 40 to 50 minutes, or until the sauce is bubbly and the tater tots are golden brown and crispy on top.

Notes

  • For a healthier option, you can substitute ground turkey or chicken for the beef.
  • Frozen mixed vegetables can be any combination you prefer, such as peas, carrots, and corn.
  • Ensure the tater tots are spread in a single, even layer for consistent baking and crispiness.
  • Let the casserole rest for 5 minutes after baking before serving to allow it to set.
  • This casserole can be prepared a day ahead and refrigerated before baking for added convenience.
