Ingredients
Eggs
- 4 eggs
Homemade Teriyaki Sauce
- 1 cup soy sauce
- 3/4 cup sugar
- 1 1/2 tsp grated ginger
- 1 tsp minced garlic
- 1/2 cup mirin
- 8 tbsp water
Garnishes
- Roasted sesame seeds (to taste)
- Sliced green onions (optional)
- Oil spray (for air fryer ramekins)
Instructions
- Prepare Teriyaki Sauce: In a saucepan, combine the soy sauce, sugar, grated ginger, minced garlic, mirin, and water. Bring the mixture to a simmer over medium heat and cook until it thickens to a syrup-like consistency, stirring occasionally to prevent burning.
- Simmer Sauce Gently: Once thickened, reduce the heat to maintain a gentle simmer without boiling. This prevents the sauce from becoming too reduced or bitter while cooking the eggs.
- Poach the Eggs in Sauce: Carefully crack the eggs directly into the simmering teriyaki sauce, taking care to keep them separated so they do not stick to each other.
- Cook Eggs with Lid On: Cover the pan with a lid and allow the eggs to poach in the sauce for about 3 minutes. This ensures the egg whites set completely while the yolks remain soft and runny.
- Remove Eggs: Using a spoon, very gently lift the eggs out of the sauce to avoid breaking the yolks.
- Garnish and Serve: Sprinkle the poached eggs with roasted sesame seeds and optionally, sliced green onions for added flavor and texture. Serve immediately while warm.
- Air Fryer Version - Prepare Ramekins: Spray each ramekin lightly with oil spray to prevent sticking, then place them into the basket of the air fryer.
- Cook Eggs in Air Fryer: Crack one egg into each prepared ramekin. Set the air fryer to 360°F (190°C) and cook for 6 minutes and 30 seconds to achieve a poached texture.
- Remove and Plate: Carefully remove the ramekins from the air fryer as they will be very hot. Use a spoon to gently lift the eggs out of each ramekin and place them on plates or toast slices.
- Add Sauce and Garnish: Drizzle the homemade teriyaki sauce over the eggs, and finish with roasted sesame seeds and green onions as garnish. Serve immediately for best flavor.
