Ingredients
Mango Sauce
- 1 cup fresh ripe mango, diced
- 2 medium cloves garlic, minced
- 1/2 cup coconut milk
- 1 tablespoon light brown sugar
- 1 tablespoon Thai red curry paste
- 2 tablespoons lime juice
- Salt and pepper to taste
Chicken Marinade
- 1/2 cup coconut milk
- 2 tablespoons light brown sugar
- 2 tablespoons Thai red curry paste
- 1 tablespoon low-sodium soy sauce
- 1/4 cup freshly-squeezed lime juice
- 1 tablespoon lemongrass paste
- 3 medium cloves garlic, minced
- Salt and pepper to taste
Chicken and Garnish
- 2 lbs boneless skinless chicken thighs, cut into 1-inch cubes
- Minced fresh cilantro for serving
Instructions
- Prepare the Mango Sauce: In a food processor or blender, combine the diced mango, minced garlic, coconut milk, brown sugar, Thai red curry paste, and lime juice. Blend until smooth. Season with salt and pepper to taste. Transfer the sauce to the refrigerator and chill until ready to serve.
- Make the Chicken Marinade: In a large bowl, whisk together 1/2 cup coconut milk, brown sugar, curry paste, soy sauce, lime juice, lemongrass paste, and minced garlic until well combined. Season the marinade with salt and pepper to taste.
- Marinate the Chicken: Place the cubed chicken thighs into a sealable plastic bag or shallow bowl. Pour the marinade over the chicken, ensuring all pieces are coated. Seal the bag or cover the bowl and refrigerate for at least 2 hours or up to 12 hours to allow flavors to penetrate the meat.
- Prepare for Cooking: Remove the chicken from marinade and gently pat dry with paper towels to remove excess moisture. Discard the marinade. Thread the chicken cubes onto skewers evenly.
- Preheat the Grill: Heat an outdoor grill to medium-high heat, or if indoors, lightly grease and preheat a grill pan on the stovetop over medium-high heat.
- Grill the Chicken Skewers: Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally to ensure even cooking. Grill until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Garnish and Serve: Remove chicken skewers from the grill and sprinkle with minced fresh cilantro. Serve warm alongside the chilled mango sauce for dipping. Enjoy your flavorful Thai-inspired meal!
Notes
- Soaking wooden skewers in water for 30 minutes prior to grilling will prevent them from burning.
- For a spicier kick, add extra Thai red curry paste to the marinade or sauce.
- You can substitute chicken thighs with chicken breast, but thighs remain juicier and more flavorful when grilled.
- If outdoor grilling is not an option, a grill pan on the stovetop works well.
- Leftover mango sauce can be refrigerated and used within 2-3 days.
