Ingredients
Chicken
- 2 1/2 to 3 lbs chicken meat (thighs, breast, or drumsticks)
Marinade
- 1/2 cup mayonnaise
- 1 1/2 tbsp Dijon mustard
- 1/4 cup freshly squeezed lemon juice
- 3 to 4 garlic cloves, grated or pressed
- 2 tsp sea salt
- Ground black pepper, to taste
- 1 tsp dried garlic powder
- 1 tsp dried onion powder
- 1 tsp coriander
- 1 tsp smoked paprika
- 2 to 3 tbsp fresh, chopped dill
Instructions
- Preparing the Marinade: In a large glass casserole dish or mixing bowl, combine the mayonnaise and Dijon mustard. Add freshly squeezed lemon juice and grated or pressed garlic cloves. Season with sea salt, black pepper, garlic powder, onion powder, coriander, smoked paprika, and fresh dill. Whisk thoroughly until the mixture forms a smooth, uniform sauce.
- Marinating the Chicken: Take the chicken pieces and pat them dry with paper towels. Place the chicken into the bowl or dish containing the marinade. Using your hands, massage the marinade evenly into the chicken, ensuring every piece is completely coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes up to 2 hours, or overnight for best flavor infusion.
- Preheating the Grill: Heat your outdoor grill to 500°F (260°C) and allow it to preheat for 10 to 15 minutes. The grill grates should be very hot to prevent the chicken from sticking during cooking.
- Grilling the Chicken: Place the marinated chicken pieces on the hot grill grates, leaving 1 to 2 inches of space between each piece for even cooking. Close the grill lid and cook until the internal temperature of the chicken reaches 165°F (74°C). Boneless chicken thighs typically require 16 to 18 minutes. Turn the chicken every 4 to 6 minutes to promote even cooking and prevent burning. If pieces become charred but are not cooked through, move them to a cooler part of the grill for indirect heat cooking.
- Resting the Chicken: Remove the grilled chicken from the grill and transfer it to a tray. Let it rest for 10 minutes before slicing or serving whole. This resting period helps the juices redistribute, making the chicken juicier and more flavorful.
Notes
- Marinate the chicken overnight for more intense flavor and tenderness.
- Ensure your grill is properly preheated to prevent sticking and achieve those desirable grill marks.
- Use a meat thermometer to check for doneness and avoid overcooking.
- The marinade works well with all chicken cuts including breasts, thighs, drumsticks, and wings.
- Letting the chicken rest after grilling enhances juiciness and texture.
