  • Total Time: 1 hour 2 minutes
  • Yield: 9 large cookies

Ingredients

  • Cookies:
  • 180 g all-purpose flour
  • 2 tablespoons instant espresso powder
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 115 g unsalted butter, softened
  • 100 g granulated sugar
  • 50 g brown sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • Mascarpone Cream:
  • 200 g mascarpone cheese
  • 100 g whipping cream
  • 50 g powdered sugar
  • ½ teaspoon vanilla extract
  • 2 tablespoons cocoa powder, for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix dry ingredients: In a medium bowl, combine flour, espresso powder, baking powder, baking soda, and salt. Set aside.
  3. Cream butter and sugars: In a large bowl, use a hand mixer to beat softened butter until creamy. Add granulated and brown sugar; beat until fluffy. Mix in egg and vanilla until smooth.
  4. Combine: Add the dry ingredients to the wet mixture and mix on low speed until just combined.
  5. Scoop dough: Use a 4-tablespoon cookie scoop to portion dough onto the prepared baking sheet, spacing 2–3 inches apart.
  6. Bake: Bake for 11–12 minutes, or until the edges are set. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  7. Make mascarpone cream: In a medium bowl, beat mascarpone until creamy. Add whipping cream, powdered sugar, and vanilla extract. Beat for about 5 minutes, until thickened and barely moves when the bowl is tilted.
  8. Top cookies: Scoop or pipe mascarpone cream onto cooled cookies. Use a spoon or offset spatula to spread and swirl the cream.
  9. Dust: Use a fine mesh sieve to dust cocoa powder over the top of each cookie.

Notes

  • Cookies must be completely cooled before adding mascarpone cream.
  • Use high-quality mascarpone and cocoa powder for best flavor.
  • Store assembled cookies in the fridge and enjoy within 2–3 days for optimal texture.
  • Use a piping bag for a cleaner, more decorative finish.
