Ingredients
Stuffing Mixture
- 1 (5 oz.) can tuna packed in olive oil, drained
- 2 tablespoons very finely chopped red onion
- 1/4 cup finely chopped cilantro
- 2 teaspoons olive oil
- 1 tablespoon mayonnaise
- 1 tablespoon fresh-squeezed lime juice (adjust to taste)
- Sea salt and fresh ground black pepper to taste
Avocado
- 1 large ripe avocado
- Additional lime wedges for serving (optional)
Instructions
- Drain Tuna: Drain the canned tuna using a colander placed in the sink, and gently break the tuna apart with a fork to ensure it’s flaky and ready to mix.
- Chop Herbs and Onion: Finely chop red onion and cilantro. Alternatively, green onion can be used if preferred or if cilantro is omitted.
- Prepare Avocado: Cut the avocado in half lengthwise and remove the pit carefully.
- Remove and Mash Avocado Flesh: Scrape out most of the avocado flesh from the skin, leaving a thin layer close to the skin to keep the avocado halves sturdy. Place the scooped avocado into a large, flat bowl where it can be mashed easily.
- Mash Avocado: Using a large fork, thoroughly mash the avocado until smooth but still slightly chunky for texture.
- Mix Dressing: To the mashed avocado, add olive oil, mayonnaise, lime juice, salt, and freshly ground black pepper. Mix thoroughly to combine all flavors.
- Add Tuna: Fold the drained tuna gently into the avocado mixture until well combined.
- Add Onion and Cilantro: Stir in the finely chopped red onion and cilantro carefully to keep the texture balanced.
- Season: Taste the mixture and adjust seasoning by adding more salt, pepper, or lime juice as desired.
- Stuff Avocado Halves: Spoon the prepared tuna and avocado mixture back into the hollowed avocado halves, generously filling them.
- Serve: Serve the stuffed avocados immediately with lime wedges on the side for extra tangy flavor if desired.
Notes
- Use tuna packed in olive oil for richer flavor, but water-packed tuna can be used for a lighter option.
- When scooping avocado flesh, leave a thin layer on the skin to maintain the shape and avoid the halves breaking apart.
- Adjust lime juice to your preferred tanginess.
- If you don’t like cilantro, substitute with more green onion or omit it entirely.
- This recipe is best served fresh to avoid avocado browning.
