Ingredients
Soup:
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 large yellow onion, diced
- 2 large carrots, peeled and thinly sliced
- 1 rib celery, diced
- 2 tablespoons all-purpose flour
- 1 teaspoon poultry seasoning
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 4 cups turkey stock
- 2 and 1/2 cups chopped leftover turkey (or chicken)
- 1 cup frozen green peas
Dumplings:
- 1 cup self-rising flour
- 1 cup yellow cornmeal
- 3 tablespoons granulated sugar
- 1/2 teaspoon poultry seasoning
- 2 tablespoons butter, melted
- 1 large egg
- 1/2 cup whole milk
- 1/2 cup sweet kernel corn, drained
Instructions
- Sauté Vegetables: In a large pot, melt the butter over medium heat. Add the minced garlic, diced onion, sliced carrots, and diced celery. Sauté for 5 minutes, stirring frequently, until the vegetables soften and release their aroma.
- Create Roux: Whisk in the all-purpose flour, poultry seasoning, kosher salt, and ground black pepper. Continue whisking for 2 minutes to cook out the raw flour taste and to help thicken the soup base.
- Add Stock and Turkey: Stir in the turkey stock and bring the mixture to a simmer. Once simmering, add the chopped leftover turkey. Let it heat through so the flavors meld.
- Prepare Dry Dumpling Ingredients: In a large bowl, whisk together self-rising flour, yellow cornmeal, granulated sugar, and poultry seasoning to evenly distribute the dry ingredients.
- Mix Wet Dumpling Ingredients: In a separate bowl, whisk together melted butter, egg, and whole milk. Add this wet mixture to the bowl of dry ingredients and stir until combined. Fold in the drained sweet kernel corn for sweetness and texture.
- Add Dumplings to Soup: Using a tablespoon, drop spoonfuls of the dumpling batter onto the simmering turkey soup. Cover the pot tightly with a lid to trap steam. Let the dumplings steam and simmer for 5 minutes.
- Cook Dumplings Through: After 5 minutes, carefully turn each dumpling over in the pot to cook evenly. Cover again and cook for an additional 5 to 10 minutes, or until dumplings are fully cooked and fluffy.
- Finish with Peas: Gently stir the frozen green peas into the soup and simmer for a few more minutes until the peas are heated through and tender.
Notes
- For a gluten-free version, substitute self-rising flour with gluten-free self-rising blend and ensure cornmeal is certified gluten-free.
- Leftover turkey can be swapped with leftover rotisserie chicken if preferred.
- Do not lift the pot lid frequently while dumplings are cooking to maintain steam for proper rising.
- Adjust the seasoning with additional salt or pepper to taste before serving.
- For a spicier variation, add a pinch of cayenne pepper or smoked paprika to the broth.
