Ingredients
Salad Ingredients
- 10 ounces cherry tomatoes, halved
- ½ medium red onion, thinly sliced
- 1 (12 ounce) jar marinated artichoke hearts, drained
- 1 (15 ounce) can cooked chickpeas, rinsed, drained, and dried (about 1 ½ cups)
- 2 tablespoons fresh basil, cut into thin strips
- 2 tablespoons fresh chives, finely diced
- 1 tablespoon capers
Tuscan Vinaigrette
- ¼ cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried parsley
- ¼ to ½ teaspoon salt, to taste
- ½ teaspoon garlic powder or 1 garlic clove, finely minced
- ¼ teaspoon ground black pepper
Instructions
- Prep the Produce and Beans: Cut the cherry tomatoes in half, thinly slice the red onion, finely dice the chives, and cut the basil into thin strips. Drain the marinated artichoke hearts and set aside. Rinse and drain the chickpeas thoroughly, then pat dry to remove excess moisture.
- Make the Tuscan Vinaigrette: In a small bowl, whisk together the olive oil, red wine vinegar, dried parsley, salt, garlic powder (or fresh garlic), and ground black pepper until the dressing is well combined.
- Combine the Salad: In a large mixing bowl, add the halved tomatoes, sliced red onion, chopped chives, basil strips, marinated artichoke hearts, rinsed chickpeas, and capers. Pour the prepared vinaigrette over the ingredients and toss gently until everything is evenly coated with the dressing.
- Serve or Chill: Serve the salad immediately for a fresh taste, or cover and refrigerate for 1-2 hours to allow the flavors to meld and deepen before serving. Enjoy your vibrant Tuscan Artichoke Tomato Salad!
Notes
- You can substitute fresh parsley for the dried parsley in the vinaigrette for a brighter flavor.
- The salad is best served chilled but can be enjoyed immediately if short on time.
- For added texture, sprinkle toasted pine nuts or walnuts on top before serving.
- This salad keeps well in the refrigerator for up to 2 days, but the tomatoes may release juice over time.
- If preferred, fresh garlic can be used in place of garlic powder for a stronger garlic taste.
