Ingredients
For the Tuna Melt
- 4 slices sourdough bread, toasted (2 oz or 35-40 g each)
- 6 oz canned tuna in brine, drained (180 grams)
- ¼ small white onion or red onion, finely diced
- 1 heaped teaspoon wholegrain mustard
- 2.5 tablespoons mayonnaise
- 1 cup grated cheese (Cheddar or Tasty variety)
- A few pinches of sea salt
- Ground black pepper to taste
To Serve
- Gherkins
- Sliced cucumber
Instructions
- Pre-toast the bread: Toast the sourdough bread on the lowest setting in a toaster until lightly crisp. Arrange the toasted slices on a piece of parchment paper placed on a flat baking tray.
- Preheat the grill: While preparing the toppings, preheat your oven’s grill (broiler) setting to medium-high.
- Prepare the tuna mixture: In a bowl, combine the drained tuna with the finely diced onions, wholegrain mustard, and mayonnaise. Use a fork to mash and mix these ingredients well until evenly combined.
- Grate the cheese: Grate your choice of cheese (Cheddar or Tasty) and set it aside for topping.
- Assemble the open-faced sandwiches: Spread a generous few tablespoons of the tuna mixture evenly onto each toasted bread slice. Then top each with a generous layer of grated cheese.
- Grill the sandwiches: Place the tray under the preheated grill. Position the tray so the slices are not too close to the heat to avoid burning. Grill until the cheese melts completely and develops a golden, bubbly crust — this should take only a few minutes. Keep a close watch.
- Serve: Remove the tuna melts from the oven and let them cool slightly. Sprinkle each with sea salt and freshly ground black pepper. Serve warm with gherkins and sliced cucumber on the side.
Notes
- Make sure not to place the bread too close to the grill to avoid burnt edges before the cheese melts.
- Drain the canned tuna thoroughly to prevent the mixture from becoming watery.
- You can substitute sourdough bread with any good-quality crusty bread if preferred.
- Adjust the amount of mustard and mayo to your taste preference for tanginess and creaminess.
- Serve immediately for the best texture and flavor of melted cheese and warm tuna topping.
