This fluffy and moist vegan apple bread is made in just one bowl using simple ingredients. It's naturally dairy-free and can be easily adapted to be gluten-free and refined sugar-free. Perfect for cozy mornings or a light dessert, with optional cream cheese icing and caramelized apples for an extra treat.

  • Total Time: 1 hour 10 minutes
  • Yield: 12 servings

Ingredients

  • Dry Ingredients:
  • 2½ cups (315g) all-purpose plain flour
  • 1 cup (190g) packed brown sugar, coconut sugar, or granulated sugar
  • 3 teaspoons baking powder
  • ¼ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • Pinch of salt (optional)
  • Wet Ingredients:
  • 1 medium-sized apple (~180g), grated coarsely or finely chopped
  • 1 cup (250g) dairy-free milk
  • ½ cup (120g) neutral-flavored oil
  • 1 tablespoon apple cider vinegar (optional)
  • 1 teaspoon vanilla extract (optional)
  • Cream Cheese Icing (optional):
  • ¼ cup (60g) vegan cream cheese, room temperature
  • ½ cup (50g) powdered sugar
  • 2 tablespoons (20g) vegan butter, room temperature
  • Caramelized Apples (optional):
  • 1 medium-sized apple (~180g), cubed
  • 1 tablespoon (15g) vegan butter, oil, or water
  • 2 tablespoons (25g) packed brown sugar or coconut sugar

Instructions

  1. Preheat oven to 180°C (350°F). Grease or line an 8-inch (20 cm) loaf pan with parchment paper.
  2. Make the Bread: In a large bowl, mix together all dry ingredients until no lumps remain. Add in all wet ingredients and mix until just combined.
  3. Pour the batter into the prepared pan and smooth the top. Bake for 50–60 minutes, or until a toothpick inserted comes out clean or with a few crumbs. If browning too quickly, tent with foil halfway through baking.
  4. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  5. Optional Cream Cheese Icing: In a bowl, mix vegan cream cheese, powdered sugar, and vegan butter until smooth. Adjust sweetness as desired.
  6. Optional Caramelized Apples: In a saucepan over medium-low heat, cook the cubed apples in vegan butter until softened and slightly golden. Add sugar and continue to cook until caramelized, adding a splash of water if needed.
  7. Serve: Once the bread has cooled, top with cream cheese icing and caramelized apples. Slice and enjoy!

Notes

  • Gluten-free option: Use 1½ cups almond flour and 1 cup gluten-free all-purpose flour. Bake for 65–70 minutes.
  • Less sweet version: Use ¾ cup (140g) sugar instead of 1 cup.
  • Grated apple: Coarsely grate and avoid excess juice. Add extra flour if apple is very juicy.
  • Storage: Store at room temperature for 1 day, in the fridge for 4 days, or freeze undecorated slices for up to 1 month.
  • The bread is also delicious without toppings or can be served with other frostings or coconut yogurt.
