These soft and fluffy Vegan Garlic Parmesan Dinner Rolls are perfect for holidays or any special meal. Infused with garlic, fresh herbs, and plant-based Parmesan, and optionally stuffed with vegan cheese, they offer irresistible flavor in every bite.

  • Total Time: 3 hours 50 minutes
  • Yield: 15 rolls

Ingredients

  • Dough:
  • 3 cups all-purpose flour (360g) + extra for kneading
  • 2 tablespoons granulated sugar or maple syrup/agave (25g)
  • 2 ¼ teaspoons instant yeast (1 packet)
  • 1 teaspoon sea salt
  • 1 cup warm vegan milk (240mL), 110–120°F
  • ¼ cup melted vegan butter or oil (56g)
  • ¼ cup fresh parsley, chopped
  • 3 tablespoons vegan Parmesan cheese
  • 3 cloves garlic, minced
  • ¾ cup shredded vegan cheese (optional, for stuffing)
  • Garlic Rub (for topping):
  • 6 tablespoons melted vegan butter (84g)
  • 1 tablespoon finely diced fresh parsley
  • 2 cloves garlic, finely minced
  • 2 tablespoons vegan Parmesan cheese

Instructions

  1. In the bowl of a stand mixer, whisk together the flour, sugar, yeast, and salt.
  2. Create a well in the center, add warm vegan milk and melted butter, and mix with a spatula until just combined (shaggy dough).
  3. Add garlic, vegan Parmesan, and parsley. Using a dough hook, knead for 5–6 minutes on low speed. Add up to 2 tbsp more flour if too sticky. The dough should be smooth and slightly elastic.
  4. Lightly oil the bowl, place the dough back in, cover with a kitchen towel, and let rise in a warm area for 2 hours, or until doubled in size.
  5. Punch down dough, fold, and divide into 15 equal pieces. Shape each into a ball, pinching the underside to hide the seam.
  6. Optional: Stuff each roll with a bit of shredded vegan cheese by opening the center, filling, then sealing well.
  7. Grease a 9×13 inch baking dish and arrange the rolls evenly. Cover and let rise for another 1 hour until touching and puffy.
  8. Preheat oven to 400°F (200°C) during the last 20 minutes of proofing.
  9. Mix the garlic rub ingredients. Brush half over the tops of the rolls using a pastry brush.
  10. Bake for 15 minutes, or until golden brown. Remove from oven and immediately brush with remaining garlic rub.
  11. Let rest for 15 minutes to soften before serving. Enjoy warm with vegan butter or as-is!

Notes

  • Make sure your plant-based milk is warm, not hot, to activate the yeast.
  • Stuffing the rolls with vegan cheese is optional but adds a gooey center and extra flavor.
  • Let the rolls rest after baking to fully soften and absorb the garlic butter rub.
  • Store leftovers in an airtight container for 2–3 days or freeze for later.
