This Vegan Lemon Pie recipe features a gluten-free oat flour crust and a creamy, tangy lemon filling made with coconut and soy milk. Topped with a fluffy aquafaba meringue, it's a delicious dairy-free, egg-free dessert perfect for any occasion. The pie is baked until golden and set, then chilled overnight for the best texture and flavor.

  • Total Time: 10 hours 35 minutes
  • Yield: 12 servings

Ingredients

Crust

  • 1 ⅔ cup (165g) oat flour (gluten-free if needed)
  • ⅓ cup (37g) tapioca flour or cornstarch
  • 1 batch flax egg (2 tablespoons flaxseed meal mixed with 4 tablespoons water)
  • 3 tablespoons sugar
  • ⅓ cup (70g) solid but scoopable refined coconut oil
  • 1/4 - 1/2 cup cold water
  • Pinch of salt

Filling

  • 2 cups full-fat coconut milk (from a can)
  • 1 cup soy milk
  • 3/4 cup granulated sugar (up to 1 cup for sweeter)
  • 8 tablespoons cornstarch
  • 1 tsp agar agar powder
  • 1/2 cup lemon juice
  • Zest of 2 lemons
  • ½ tsp turmeric (for color, optional)
  • 25 g vegan butter (optional, for richness)

Meringue (optional)

  • 1/2 cup aquafaba (liquid from a can of chickpeas)
  • 1/2 tsp cream of tartar
  • 1 cup powdered sugar
  • 1 tbsp cornstarch

Instructions

  1. Prepare the Crust: In a medium bowl, combine oat flour, tapioca starch, sugar, and salt until well mixed. Add coconut oil, half the cold water, and the prepared flax egg. Mix using your hands until a dough forms, adding more water as needed to achieve a dough that's neither sticky nor dry.
  2. Roll out the Dough: Place the dough between two pieces of parchment paper and roll it out evenly to about an inch wider than a 9-inch pie dish, ensuring no bumps.
  3. Transfer to Pie Dish: Remove the top parchment sheet and carefully transfer the rolled dough to the pie dish. Press evenly along the bottom and sides to form the crust.
  4. Dock and Chill: Use a fork to poke holes all over the crust to prevent puffing. Freeze for 10 minutes while preheating oven to 180°C (356°F).
  5. Bake the Crust: Bake the crust for 20 minutes until lightly golden. Remove and let cool completely.
  6. Prepare the Filling: In a medium pot, mix coconut milk, soy milk, sugar, cornstarch, agar agar powder, lemon juice, lemon zest, turmeric, and vegan butter (if using). Stir until cornstarch is fully dissolved.
  7. Cook the Filling: Heat over medium heat until simmering, then reduce to medium-low and whisk constantly for 5-8 minutes until thickened. Remove from heat, taste, and adjust sweetness or tartness if needed.
  8. Cool the Filling: Pour the filling into a medium bowl and cover tightly with plastic wrap, ensuring the wrap touches the surface to prevent skin formation. Allow to cool to room temperature.
  9. Assemble the Pie: Once crust and filling are cool, whisk the filling till smooth and pour into the crust. Smooth with a spatula and refrigerate overnight to set fully.
  10. Prepare Optional Meringue: Preheat oven to 190°C (375°F) if you don’t have a blow torch. In a stand mixer with a whisk attachment, beat aquafaba on high until foamy.
  11. Add Meringue Ingredients: Add powdered sugar, vanilla extract, lemon juice, and cream of tartar to the aquafaba. Beat for 5-8 minutes until stiff peaks form.
  12. Top the Pie: Spoon or pipe the meringue onto the cooled pie. Use a blow torch to brown the peaks or bake in the preheated oven for 5-6 minutes until golden, watching carefully to prevent burning.

Notes

  • The flax egg can be substituted with 3 tablespoons of aquafaba for the crust if preferred.
  • Use gluten-free oat flour to make the pie gluten-free.
  • Turmeric is optional and used just to give the filling a warm yellow color without affecting flavor.
  • For best results, chill the pie overnight to allow the filling to fully set.
  • The meringue topping is optional but adds a beautiful, light finish.
  • If you don't have a blow torch, carefully watch the meringue while baking to avoid burning.
