Ingredients
For the Sauce:
- 2 tablespoons soy sauce, regular or low-sodium
- 1 teaspoon dark soy sauce
- ½ tablespoon black vinegar (or rice wine vinegar)
- 1 teaspoon sesame oil
- 1 ½ teaspoons honey
- ½ teaspoon fresh ginger, grated
For the Noodles and Vegetables:
- 6 ounces lo mein noodles (or any egg noodle or spaghetti), fresh or dry
- 1 ½ tablespoons sesame oil
- 2 cloves garlic, minced
- 2 cups cremini mushrooms, sliced
- 1 cup broccoli florets
- ½ cup carrots, julienne cut
- ½ red bell pepper, sliced
- 3 cups baby spinach or bok choy
- Sesame seeds (for garnish)
Instructions
- Prepare the sauce: In a small mixing bowl, whisk together the soy sauce, dark soy sauce, black vinegar, sesame oil, honey, and grated fresh ginger until fully combined. Set this flavorful sauce aside for later use.
- Cook the noodles: Cook the lo mein noodles according to the package instructions, whether fresh or dry. Once cooked, drain the noodles thoroughly and set them aside to be added later.
- Stir-fry the vegetables: Heat 1 ½ tablespoons of sesame oil in a large skillet or wok over medium-high heat. Add minced garlic, sliced cremini mushrooms, broccoli florets, julienne carrots, and sliced red bell pepper. Stir fry these until they become slightly tender, which should take about 3 minutes.
- Wilt the greens: Add 3 cups of baby spinach or bok choy to the skillet and continue cooking for 2 to 3 minutes until the greens have wilted and incorporated well with the other vegetables.
- Combine noodles and sauce: Stir the cooked noodles into the vegetable mixture in the skillet, then pour the prepared sauce over everything. Toss thoroughly to ensure all ingredients are evenly coated with the sauce and heated through.
- Garnish and serve: Sprinkle sesame seeds on top of the stir-fried lo mein noodles before serving to add a delightful crunch and visual appeal.
