Ingredients
Vegetables and Aromatics
- 1 large red onion (188g), finely diced
- 4 ribs of celery, finely diced
- 1 large carrot or two medium carrots (226g), diced
- 5 cloves garlic (12g), minced
- 1 cup kale (67g), shredded
Liquids and Seasonings
- 2 tablespoons oil (28g)
- Salt & pepper, to taste
- 1 tablespoon Italian seasoning
- 30 ounces cooked white kidney beans
- 4 cups vegetable broth (960g)
- ½ cup water (120g)
- Juice of 1 small lime
Instructions
- Heat the oil and sauté vegetables: In a large, deep pot over medium heat, heat the 2 tablespoons of oil. Add the diced onion, celery, and carrots along with salt and pepper. Sauté for about 8 minutes until onions are translucent and carrots are softened.
- Add garlic and cook: Stir in the minced garlic and cook for another 5 minutes until fragrant and the vegetables start to caramelize, enhancing their flavor.
- Add seasoning and beans: Mix in the Italian seasoning and the cooked white kidney beans, stirring well to incorporate all the flavors.
- Add broth and simmer: Pour in the vegetable broth and stir. Bring the mixture to a boil, then reduce heat to simmer for about 20 minutes to allow flavors to meld.
- Blend part of the soup: Remove 2 cups of the soup (including vegetables) and place in a blender with ½ cup water. Blend until completely smooth to create a creamy texture, then pour back into the pot and stir to blend evenly.
- Add kale and lime juice: Stir in shredded kale and the juice of one small lime. The residual heat will wilt the kale and brighten the soup.
- Serve: Allow the soup to cool slightly, then serve warm with fresh bread. Enjoy this wholesome, comforting vegan white bean soup!
