Ingredients
Potatoes and Seasoning
- 2 large russet potatoes
- Healthy spray oil (avocado oil spray recommended)
- 1/4 tsp paprika (to taste)
- 1/4 tsp garlic powder
- Salt and pepper (to taste)
Cheese
- 1/2-1 cup grated cheese (cheddar, pepper jack, or Mexican blend)
Toppings
- Fresh or pickled jalapeño slices
- Sour cream (or Greek yogurt)
- Salsa (or pico de gallo)
- Black beans
- Diced onion (or pickled red onion)
- Guacamole
- Tomatoes
- Chopped olives
- Corn salsa
- Fresh cilantro (or green onions)
- Hot sauce
Instructions
- Preheat Oven: Preheat your oven to 450℉ to ensure it reaches the right temperature for crispy potato slices.
- Prepare Potatoes: Wash and peel the russet potatoes, then slice them into discs roughly the thickness of steak fries. This thickness helps achieve a crunchy exterior with a fluffy inside.
- Season Potatoes: Spray or rub the potato slices evenly with your favorite oil, such as olive or avocado oil. Sprinkle them with paprika, garlic powder, salt, and pepper according to your taste preferences.
- Arrange for Baking: Lay the potato slices flat on a wire cooling rack or grilling rack placed atop a reflective baking sheet. This setup allows for even cooking on both sides without flipping.
- Bake Potatoes: Place the baking sheet on the center rack of the oven and bake for 25-30 minutes. The potatoes are ready when they become golden brown and start to bubble on the surface.
- Add Cheese: Remove the tray from the oven carefully, sprinkle the grated cheese over the hot potatoes, and return to the oven for 1-2 minutes to melt the cheese thoroughly.
- Top and Serve: Once cheese is melted, add your favorite nacho toppings such as jalapeños, sour cream, salsa, black beans, diced onions, guacamole, tomatoes, olives, corn salsa, cilantro, and hot sauce. Serve immediately and enjoy!

- A wire cooling rack with a reflective baking sheet helps achieve crispy chips without flipping.
- You can customize toppings based on preference or dietary requirements.
- Substitute Greek yogurt for sour cream for a healthier option.
- Adjust seasoning quantities to taste, especially salt and paprika levels.
- Use a high-smoke point oil like avocado or coconut oil for healthier crispiness.
- Keep an eye on the potatoes near the end of baking to avoid burning as oven temperatures can vary.
