Ingredients
Walnut Sauce Ingredients
- 1.5 cups walnuts (150g)
- ¾ cup milk (150ml)
- 1 slice white bread
- 1 clove garlic
- 1 cup freshly grated parmesan cheese (50g)
- 1 tbsp olive oil
Instructions
- Prepare Bread and Milk: Cut the crusts off the white bread and place the slice in a bowl with the milk, allowing it to soak for a few seconds until softened.
- Combine Ingredients: Add the walnuts, garlic, parmesan, olive oil, and the soaked bread and milk into a food processor.
- Blend the Sauce: Blitz everything together until the mixture is thick but smooth. If the sauce is too dense, gradually add a little more milk to reach the desired consistency.
- Reserve Pasta Water: If using the sauce with pasta or gnocchi, reserve 1 cup (240ml) of the hot cooking water from the pasta before draining it.
- Toss Pasta with Sauce: Drain the pasta and return it to the pot. Add the walnut sauce and loosen it by tossing with some of the reserved pasta water, using only as much as needed to create a silky coating over the pasta.
- Serve and Garnish: Serve immediately, garnished with extra walnut pieces if desired for added texture and flavor.
Notes
- Use fresh, high-quality walnuts for the best flavor and texture.
- For a dairy-free version, substitute milk with a plant-based milk and omit parmesan or replace with a vegan alternative.
- Be careful not to add too much milk at once to maintain the sauce's rich consistency.
- This sauce pairs well with both pasta and gnocchi but can also be used as a spread or dip.
- To enhance flavor, lightly toast the walnuts before blending.
- Store leftover sauce in an airtight container in the refrigerator for up to 2 days.
