Ingredients
Main Ingredients
- 8 ounces cow’s milk feta cheese
- ¼ cup honey
- 1 teaspoon red pepper flakes
- 1 teaspoon fresh lemon juice
- 2 tablespoons whole milk (or plain Greek yogurt)
- 2 tablespoons olive oil
- ⅓ cup chopped pistachios (for garnish)
- Toasted baguette slices (for serving)
Instructions
- Prepare the Feta: Break the block of feta into about 8 pieces and place them in a fine mesh strainer. Rinse briefly under cold water to reduce saltiness, then drain well. This optional step helps mellow the feta's salty flavor.
- Make the Hot Honey: In a small saucepan, combine the honey and red pepper flakes. Warm over medium heat until the honey just begins to simmer. Remove from heat and allow to cool while preparing the dip, infusing the honey with spicy notes.
- Whip the Feta: Transfer the drained feta to a food processor bowl. Add lemon juice and whole milk (or Greek yogurt). Process until the mixture reaches a ricotta or cottage cheese-like texture. With the processor running, slowly drizzle in the olive oil to bind and smooth the mixture. Scrape down the sides, then process again until creamy with a Greek yogurt-like consistency.
- Assemble and Serve: Transfer the whipped feta to a serving bowl. Use a spoon to create a swirl pattern on the surface. Drizzle the cooled hot honey over the dip evenly. Garnish with the chopped pistachios for texture and a nutty flavor. Serve immediately with toasted baguette slices for scooping.
Notes
- Rinsing the feta is optional but helps reduce saltiness if desired.
- You can substitute the whole milk with plain Greek yogurt for a tangier flavor and thicker texture.
- Adjust red pepper flakes to taste to control the heat level in the hot honey.
- Serve the dip immediately for the best texture and fresh flavor.
- Use good-quality olive oil for a smoother and richer whipped feta.
- To toast baguette slices, lightly brush with olive oil and bake at 350°F (175°C) until golden and crisp, about 10 minutes.
