Ingredients
Cluster Base
- 2-3/4 cups white chocolate chips (use the best quality you can)
- 1-3/4 cups creamy peanut butter (I like Skippy)
- 2 cups Rice Krispies cereal
- 2 cups pretzel twists
- 1/2 cup toffee bits (plus more for topping)
Toppings (Optional)
- 1/4 cup mini chocolate chips (for topping)
- Additional toffee bits (for topping)
Instructions
- Prep: Line two large sheet pans with parchment paper, foil, wax paper, or silicone liners to prevent sticking and for easy cleanup. Place the toffee bits in the freezer to keep them firm while you prepare the mixture.
- Melt Mixture: In a large microwave-safe bowl, combine the white chocolate chips and creamy peanut butter. Microwave in 25-second bursts, stirring well for 20 seconds between each burst until the mixture is melted and smooth. Allow it to cool slightly until warm, not hot, to preserve texture.
- Prepare Mix-ins: Place the whole pretzels into a large zip-top bag and crush them coarsely using a meat mallet or rolling pin. In a large mixing bowl, combine the crushed pretzels, Rice Krispies cereal, and the chilled toffee bits.
- Combine: Pour the warm white chocolate and peanut butter mixture over the dry ingredients. Gently fold together to coat everything evenly while avoiding overmixing to prevent the toffee bits from melting too much.
- Portion Out: Using a 1 or 2-tablespoon scoop, drop spoonfuls of the mixture onto the prepared sheet pans. Sprinkle additional toffee bits and mini chocolate chips on top as desired for extra flavor and texture.
- Chill and Serve: Refrigerate the clusters for 1 hour or until firm. Serve the clusters straight from the refrigerator for the best texture and taste.
Notes
- You can adjust the size of the clusters by using different sized scoops; smaller scoops make bite-sized treats perfect for parties.
- Use quality white chocolate chips for best flavor and smooth melting.
- Freezing the toffee bits before mixing helps maintain their crunch in the final clusters.
- Store clusters in an airtight container in the refrigerator to keep them firm and fresh.
- If you want to make these nut-free, substitute the peanut butter with sunflower seed butter or another nut-free spread.
