4.2 from 1 review

This creamy Yukon Gold Mashed Potatoes recipe combines tender potatoes cooked in flavorful chicken stock with rich cream cheese, butter, and sour cream for an irresistibly smooth and savory side dish. Enhanced with garlic, onion powder, and optional chives, it’s perfect for holiday meals or comforting weeknight dinners.

  • Total Time: 30 minutes
  • Yield: 6 servings

Ingredients

Main Ingredients

  • 3 pounds Yukon Gold potatoes, peeled and cubed
  • 4 garlic cloves
  • 4 cups chicken stock

Dairy & Fats

  • 4 ounces cream cheese, at room temperature
  • 4 tablespoons salted butter
  • 1/2 cup sour cream

Seasonings

  • 1.5 teaspoons salt
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 tablespoon chives, diced (fresh or dried, optional)

Instructions

  1. Cook Potatoes and Garlic: Combine the cubed Yukon Gold potatoes and whole garlic cloves in a large stockpot. Pour in the chicken stock and place the pot over medium-high heat. Bring to a boil, then cover and allow to cook for 15-20 minutes, or until the potatoes are fork-tender.
  2. Drain and Return to Pot: Drain the cooked potatoes and garlic using a colander. Return them to the empty stockpot and reduce the burner to low heat to keep them warm and prevent sticking.
  3. Mash and Season: Using a potato masher, gently mash the potatoes and garlic to start breaking them down. Add the cream cheese, salted butter, salt, onion powder, and garlic powder. Continue mashing until the mixture becomes creamy with minimal lumps.
  4. Finish and Serve: Remove the pot from heat. Stir in the sour cream and diced chives, whipping the potatoes gently to combine all ingredients thoroughly. Serve the mashed potatoes warm as a delicious side dish.

Notes

  • For a richer flavor, use homemade chicken stock or high-quality store-bought stock.
  • You can substitute heavy cream for sour cream if desired for extra creaminess.
  • Fresh chives add a nice subtle onion flavor but are optional.
  • Use a potato masher or hand mixer; avoid a food processor to prevent gummy texture.
  • Adjust salt and seasonings to taste before serving.
