These Zucchini Bread Breakfast Cookies are a wholesome and delicious way to start your day. Combining oats, zucchini, warm cinnamon, and a touch of honey, these soft and moist cookies offer a nutritious snack or breakfast option that’s quick to make and perfect for on-the-go.

  • Total Time: 24 minutes
  • Yield: 22 cookies

Ingredients

Dry Ingredients

  • 1 ½ cups quick oats
  • ¾ cup old fashioned oats
  • 1 cup oat flour (or whole wheat flour or ground grain of your choice)
  • ¼ cup ground golden flax (or chia seeds)
  • ¼ cup chopped walnuts
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • ¼ teaspoon fine sea salt

Wet Ingredients

  • ½ cup unsweetened applesauce
  • ⅓ cup honey
  • 4 tablespoons oil (or melted butter or melted coconut oil)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup shredded zucchini (excess moisture squeezed out, measured after squeezing)

Instructions

  1. Prep: Preheat your oven to 360°F (182°C) and line two cookie sheets with parchment paper or silicone baking mats to prevent sticking.
  2. Make cookie dough: In a large mixing bowl, combine all the dry ingredients thoroughly. Then add all the wet ingredients on top, folding gently until a cohesive cookie dough forms.
  3. Shape cookies: Using a tablespoon or cookie scoop, portion out dough into 2-tablespoon sized mounds. Place them about 2 inches apart on the prepared baking sheets. Gently flatten each mound into rounds roughly ½ to ⅔ inch thick and 2 to 2½ inches in diameter; the cookies will retain their shape during baking.
  4. Bake: Bake the cookies one batch at a time for 12 to 14 minutes, or until they turn lightly golden around the edges. Remove from the oven and allow cookies to cool on the cookie sheets for 5 minutes before transferring to a wire rack to cool completely.
  5. Storage: Store the cooled cookies in an airtight container at room temperature for up to 3 days for best freshness and flavor.

Notes

  • Make sure to squeeze out excess moisture from the shredded zucchini to avoid soggy cookies.
  • You can substitute oat flour with whole wheat flour or any ground grain of choice based on preference or dietary restrictions.
  • To make the recipe vegan, replace eggs with flax egg substitutes and use maple syrup instead of honey.
  • These cookies freeze well—wrap individually and keep frozen for up to 1 month. Thaw before eating.
  • For added flavor, consider mixing in a handful of raisins or dark chocolate chips.
