Ingredients
Filling
- 2 cups cooked chicken, shredded or sliced/diced
- 1 cup black beans, drained and rinsed
- 1 cup corn (fresh or frozen)
- 1 cup enchilada sauce
Other
- 2 pounds zucchini (~2-4 medium-large), sliced thinly lengthwise
- 1 cup cheddar cheese, shredded
- 1 cup additional enchilada sauce (for baking)
- 2 tablespoons cilantro, chopped (optional, for garnish)
Instructions
- Prepare the filling: In a large bowl, combine the shredded chicken, black beans, corn, and 1 cup of enchilada sauce. Mix thoroughly until all ingredients are evenly coated.
- Prepare the baking pan: Spread 1/2 cup of enchilada sauce evenly on the bottom of a large baking dish to prevent sticking and add flavor.
- Assemble the roll ups: On a clean working surface, lay down 2 to 3 thin slices of zucchini, slightly overlapping to form a 3-4 inch wide strip. Spoon 2 to 3 tablespoons of the chicken mixture onto the zucchini slices, then carefully roll them up. Place each roll seam-side down into the baking dish. Continue until all the filling and zucchini slices are used, making about 24 rolls.
- Add sauce and cheese: Drizzle the remaining 1/2 cup of enchilada sauce over the top of the zucchini rolls. Sprinkle the shredded cheddar cheese evenly over the sauce-covered rolls.
- Bake: Preheat the oven to 375°F (190°C). Bake the assembled rolls for 20-25 minutes or until the cheese is melted, bubbly, and slightly golden, and the sauce is simmering along the edges.
- Garnish and serve: Remove from the oven and let cool slightly. Garnish with chopped cilantro if desired. Serve warm and enjoy your healthy, flavorful zucchini enchilada roll ups!
Notes
- Use a mandoline slicer to cut the zucchini into thin, even slices for easier rolling.
- If zucchini slices are too watery, gently pat them dry with paper towels to prevent sogginess.
- Substitute cheddar cheese with a Mexican blend or mozzarella if preferred.
- For a vegetarian version, omit chicken and add more beans or sautéed vegetables.
- This dish can be prepared ahead and refrigerated before baking. Add 5 extra minutes to baking time if baking from cold.
