These Zucchini Fritters are a delicious and savory snack or side dish made with shredded zucchini, fresh herbs, feta cheese, and a simple batter. Crisply pan-fried to golden perfection, they pair beautifully with tzatziki or Greek yogurt sauce, making for a light yet flavorful treat that’s perfect for any meal.

  • Total Time: 40 minutes
  • Yield: 30 fritters

Ingredients

Zucchini Fritter Ingredients

  • 4 small zucchinis (about 1 1/2 lb. total)
  • 1 1/2 tsp salt
  • 3 eggs
  • 1 Tbsp dill (chopped)
  • 1/4 tsp black pepper
  • 1 small garlic clove (pressed)
  • 6 Tbsp all-purpose flour
  • 1/3 cup feta cheese (crumbled)
  • Avocado or vegetable oil for frying

Instructions

  1. Shred and Drain Zucchini: Shred the zucchinis using a grater and then use your hands to firmly squeeze out all the excess moisture to prevent soggy fritters.
  2. Mix Wet Ingredients and Seasoning: In a large bowl, combine the shredded zucchini, chopped dill, salt, black pepper, and eggs. Stir thoroughly to blend all ingredients evenly.
  3. Add Remaining Ingredients: Incorporate the pressed garlic clove, crumbled feta cheese, and flour into the zucchini mixture. Mix well until the batter is uniform and slightly thickened.
  4. Heat Oil and Fry Fritters: In a skillet, heat about 1/4 inch of avocado or vegetable oil over medium-high heat. Using a large spoon or ice cream scoop, drop portions of batter into the hot oil, flattening slightly if needed. Fry each fritter until golden brown on one side, then carefully flip and cook the other side until equally golden and cooked through.
  5. Serve Warm: Remove the fritters from the skillet and place on paper towels to drain excess oil. Serve them warm accompanied by tzatziki sauce or Greek yogurt for dipping.

Notes

  • Be sure to squeeze out as much moisture as possible from the shredded zucchini to avoid soggy fritters.
  • Feta cheese adds a tangy flavor but can be substituted with any crumbly salty cheese if preferred.
  • Adjust the salt cautiously because feta cheese is already salty.
  • Use medium-high heat to ensure the fritters cook through without absorbing too much oil.
  • These fritters can be kept warm in a low oven (200°F) if preparing in batches.
