Ingredients
- 1 1/4 cup all-purpose flour (142 g)
- 1/2 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup unsalted butter, melted and cooled (113 g)
- 1 cup light brown sugar, packed (200 g)
- 1 teaspoon vanilla extract
- 1 large egg, room temperature
- 2 medium apples, peeled, cored and cut into 1/4-inch squares
Instructions
- Preheat the oven to 350°F (175°C). Line an 8-inch by 8-inch baking pan with parchment paper and set aside.
- In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg. Set aside.
- In a large bowl, whisk together the melted butter and brown sugar until well combined, about 2 minutes.
- Add the egg and vanilla extract to the butter-sugar mixture and mix until incorporated.
- Add the dry flour mixture to the wet mixture and stir just until combined. Do not overmix.
- Fold in the chopped apples gently until evenly distributed.
- Transfer the batter to the prepared pan and spread evenly (batter will be thick).
- Bake for 25 to 28 minutes or until a toothpick inserted in the center comes out clean.
- Let cool completely in the pan, then cut into squares and serve.
Notes
- Use Granny Smith or Honeycrisp apples for best texture and flavor.
- Don’t overmix the batter; it’s okay if some dry spots remain before adding apples.
- Store in an airtight container at room temperature for up to 5 days.
