Chicken Enchilada Roll Ups are a delicious and easy make-ahead appetizer featuring a flavorful blend of shredded chicken, cream cheese, taco seasoning, and Mexican cheese wrapped in soft flour tortillas. Perfect for parties or gatherings, these bite-sized roll ups are chilled for a creamy texture and served with your favorite taco dips.

  • Total Time: 45 minutes
  • Yield: 40 roll ups

Ingredients

Ingredients

  • 5 burrito sized flour tortillas
  • 1 ounce packet of taco seasoning mix
  • 3 cups shredded chicken
  • 8 ounce package of cream cheese, softened
  • 1½ cups shredded Mexican cheese or cheddar cheese
  • 10 ounce can drained diced tomatoes with green chilies (like Rotel)
  • 1 teaspoon minced garlic
  • 4 green onions, sliced
  • ½ cup chopped cilantro for garnish (optional)

Instructions

  1. Combine Ingredients: In a large mixing bowl, combine the shredded chicken, softened cream cheese, taco seasoning, shredded Mexican cheese, drained diced tomatoes with green chilies, minced garlic, and sliced green onions. Mix thoroughly using a silicone spatula until all ingredients are evenly incorporated.
  2. Spread Mixture on Tortillas: Lay each flour tortilla flat and spread an even layer of the chicken and cheese mixture over the entire tortilla surface using the spatula. Ensure the mixture covers the tortilla evenly for a balanced bite.
  3. Roll Tortillas: Starting from one edge, tightly roll up each tortilla to form a solid log that holds its shape. Press gently to compact the fillings inside.
  4. Chill Rolls: Place the rolled tortillas in the refrigerator and chill for 30 minutes. This step helps firm up the roll ups, making them easier to slice and eat.
  5. Slice into Roll Ups: Once chilled, remove the rolls from the fridge and cut each into 1-inch thick pieces, yielding about 8 roll ups per tortilla for a total of approximately 40 pieces.
  6. Serve: Arrange the roll ups on a serving platter and garnish with chopped cilantro if desired. Serve with taco dips like salsa, sour cream, guacamole, or taco sauce for dipping.

Notes

  • For easier slicing, use a sharp knife and wipe it clean between cuts.
  • You can substitute the shredded chicken with cooked shredded turkey or a vegetarian meat alternative.
  • Adjust the amount of taco seasoning to your preferred spice level.
  • Roll ups can be made a day in advance and stored covered in the refrigerator.
  • Serve chilled or at room temperature for best flavor and texture.
