This Instant Pot Chicken with Potatoes recipe offers a quick and flavorful way to prepare a wholesome dinner. Juicy, seasoned chicken breasts are cooked perfectly alongside tender baby potatoes in a savory broth or pineapple juice, making for an easy one-pot meal in just 30 minutes.

  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

Seasoning Mix

  • 2 teaspoons salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 3 tablespoons olive oil

Main Ingredients

  • 4 boneless skinless chicken breasts (about 8 oz each)
  • 2 lbs baby potatoes (red or yellow)
  • 1 cup broth or juice (pineapple juice recommended)
  • 1 tablespoon olive oil (for sautéing)

Instructions

  1. Prepare the Seasoning Mix: In a small bowl, whisk together salt, black pepper, garlic powder, onion powder, paprika, thyme, and basil until well combined. Stir in three tablespoons of olive oil to form a seasoning mixture.
  2. Coat Chicken and Potatoes: Place the chicken breasts and baby potatoes into a large mixing bowl. Drizzle the seasoning mix over them and toss thoroughly until both the chicken and potatoes are evenly coated with the spices and oil.
  3. Sear the Chicken (Optional): Set the Instant Pot to SAUTE mode. Add the remaining tablespoon of olive oil. In batches if needed, sear the chicken breasts for about 1-2 minutes per side until lightly browned. This step adds extra flavor but can be skipped if desired, just add 2 minutes to cook time.
  4. Add Broth and Potatoes: Pour the broth or pineapple juice into the Instant Pot. Arrange the seasoned chicken breasts inside and then top with the coated baby potatoes.
  5. Pressure Cook: Close the Instant Pot lid and seal the valve. Set the pot to manual mode on HIGH PRESSURE and cook for 8 minutes. After cooking, allow for natural pressure release for 5 minutes before performing a quick release to release any remaining pressure.
  6. Check Temperature and Serve: Carefully open the lid and use a digital meat thermometer to ensure the chicken has reached an internal temperature of 160°F. Serve the chicken and potatoes as is or alongside steamed broccoli or rice for a complete meal.

Notes

  • Searing the chicken before pressure cooking adds extra flavor and color but is optional.
  • Using pineapple juice instead of broth adds a subtle sweetness complementing the spices.
  • Ensure the chicken reaches at least 160°F internally for safe consumption.
  • Natural pressure release helps keep the chicken tender and juicy.
  • This recipe works well with red or yellow baby potatoes.
